Founded as a dry community, Evanston, Illinois was the birthplace of the Women's Temperance Movement and home to Frances Elizabeth Willard, an influential protagonist in the story of Prohibition. As the Temperance Movement approached a boiling point, abstinence slowly began to creep across the country and Willard and her league of temperance supporters turned Evanston into a stronghold. For over 100 years, Evanston remained a dry town. It wasn't until Paul Hletko, owner and master distiller at Few Spirits, began lobbying the town that the antiquated laws were lifted. "I'm the vice president of the PTA at my kids' school and I coach their soccer and T-ball teams," Hletko says. "People around town know me and what I'm about, which is handy when you're looking to change 100 years of laws." Today, hidden down a dark alley in a former chop shop, Hletko and his skilled team are producing another batch of Few Spirits Barrel-Aged Gin. The gin is crafted from a mash of corn, wheat and unmalted barley, which is infused with a secret recipe of botanicals, each individually selected for the way it interacts with wood. As its name suggests, Few Barrel-Aged Gin is laid to rest for four months in five-gallon, new American oak barrels which have been toasted with a #3 char. As a result, the gin has a soft amber color, and a nose filled with liquorice candy, citrus and clove. The palate is earthy and balanced, with flavors of fresh grain and sugar complemented by light, oaky undertones. The finish is soft and delicate, with notes of caramel and brown sugar. Bottled at 93 proof, Few Barrel-Aged Gin earned a Gold Medal from the Beverage Testing Institute, where it was the highest rated gin in the last five years.

Nestled amongst the rolling hills of the Cotswolds countryside, the Cotswolds Distillery was born from a dream to produce delicious spirits in one of the most beautiful regions in the world.

From hedgefunds to HEDGEROWS
It all started back in 2014, when our founder Dan, a native New Yorker and whisky connoisseur, had moved to the Cotswolds after working in finance in London for many years. Seeking to leave behind that world and spend more time in the picturesque countryside of the Cotswolds with his family, it eventually dawned on him that he could combine his love of whisky with his desire to start a new business. A dedicated whisky fan, Dan saw the fields of golden barley around his house in the Cotswolds and had a brainwave ‘I suddenly thought, there’s barley all over the Cotswolds and nobody’s distilling it, let’s be the first!’ Having found a derelict site near his house, he set about building a distillery and a team to run it, and the doors of the Cotswolds Distillery opened in July 2014.

The making of our GIN

Although Dan's dream was always to make whisky, he also wanted to create a full range of delicious spirits including gins and liqueurs. Our first project was the gin, on which we spent two months researching botanical recipes. We distilled 150 individual botanical spirits in a whole range of different flavors and set about experimenting with different combinations. Our distillers created over 60 individual gin recipes which we whittled down to one finalist, and that became our Cotswolds Dry Gin. It may have started as something of a side-project, but it’s now at the heart of what we do and we’re very proud of what we’ve created.

Our award-winning Cotswolds Dry Gin is a delectable blend of nine carefully-considered botanicals, including local lavender from the Cotswolds and freshly peeled pink grapefruit and lime zest. Due to the unusually high volume of botanicals we use, our gin causes a beautiful pearlescent cloud to appear when ice or tonic is added. A juniper-led gin with fresh citrusy notes and a hint of lavender.

CAREFULLY SOURCED INGREDIENTS

Juniper berries, coriander seed and angelica root form the classic foundation for our Cotswolds Dry Gin. We then add Cotswold lavender from nearby Snowshill and bay leaves. The citrus element comes from freshly-peeled lime and pink grapefruit zest - unusually we use fresh peels rather than dried because of the greater quantity of essential oils. This entails peeling several hundred limes and grapefruits per week, by hand! The final botanicals are cardamom seed and black peppercorn, to give a hint of spice.

TASTING NOTES

NOSE: Fresh notes of grapefruit with earthy coriander backed-up by sweet, piney juniper. A hint of perfumed Cotswold lavender.

PALATE: Clean, pine juniper spice with fresh citrussy grapefruit. A touch of dryness from the angelica root, with eucalyptus notes from bay leaf. Subtle lime and lavender.

FINISH: Clean and balanced. Juniper, citrus and some cooling notes from bay leaf and cardamom.

SERVING SUGGESTIONS

For the perfect Cotswolds Cloudy G&T, fill a large copa glass with ice, pour over a 50ml measure of gin and top with classic tonic water. Garnish with a slice of pink grapefruit and a fresh bay leaf.

Uncle Val's Peppered Gin

In 1895, Samuele Sebastiani emigrated to the United States from Tuscany. A stonemason by trade, he quarry-mined the hills of Sonoma, California for cobblestones that were used to build the streets of San Francisco. He worked long hours, lived frugally and saved carefully, and in 1904, purchased enough land in Sonoma to open the doors to Sebastiani Winery. Sebastiani Winery was the only winery in Sonoma to remain open during Prohibition, and, as the Great Depression set in, Samuele carried out major construction projects in Sonoma including building an ice-skating rink and hotel in order to create jobs. Today, August Sebastiani, Samuel's great-grandson, is the President of 35 Maple Street Distillery, the makers of Uncle Val's Restorative Gin. The gin is named after Vaerio Cecchetti, Sebastiani's favorite uncle and a retired physician near Lucca, Italy. "In addition to being a highly regarded doctor, Uncle Val is a great cook and avid gardener," says Sebastiani. While Uncle Val's Botanical Gin is crafted from a botanical bill composed of five ingredients (juniper, lemon, sage, lavender and cucumber), Uncle Val's Peppered Gin uses only four botanicals: juniper, red bell pepper, black pepper and pimento. Sebastiani uses immersion bags (think big tea bags) in order to infuse the gin with the flavors from the botanicals. The immersion bags are steeped in the gin for several hours, although some remain in the gin longer in order to impart a heavier aroma and flavor. The juniper adds a classic element of tartness and crispness to the gin. From there, Uncle Val's Peppered Gin becomes something entirely its own. The roasted red peppers add a unique earthiness, while the black pepper adds a clear spice that's balanced by a savoriness gleaned from the pimento. After the gin is distilled five times over, Sebastiani's team filters it using carbon and lava rock (or pumice), which has a porous density that's perfect for filtering gin. Then, the gin is brought to proof using naturally sweet spring water from the Cascade Mountains before being bottled and labeled by hand. "Gin was invented in the Netherlands by a doctor, Franciscus Sylvius, who was a professor of medicine in Leyden, Holland, back in the 1650s," Sebastiani says. "He was trying to find a cure-all for kidney and stomach disorders, so he infused juniper berries into distilled spirits. The elixir became so popular that distillers began commercial production and by the end of the 1680, the Dutch were exporting more than 10 million gallons of gin each year. Gin is the only spirit that started out as a medicine, so it's fitting that we named ours after Uncle Val." Uncle Val's Peppered Gin is truly unlike any other gin on the market.

Corsair Gin-Head Style American Gin

In the 1650s, a Dutch doctor named Franciscus Sylvius was searching for a remedy to the kidney and stomach ailments that he often encountered in his practice of internal medicine. At the time, Dr. Sylvius was a Professor of Medicine in Leyden, and he attempted to infuse juniper berries into a spirit distilled from grain in order to create a panacea. The resulting elixir eventually became known as gin, and was so popular that within a few decades, the Dutch were exporting 10 million gallons annually. For the next 250 years, nearly all the gin produced in the world was barrel-aged since the spirit was stored and transported in oak barrels (at the time, glass was too fragile and plastic and stainless steel containers were still not available). In order to craft a more traditional gin, "we've rested our signature vapor basket gin in our charred oak barrels previously used to age our spiced rum," says Darek Bell, the founder and Master Distiller at Corsair Artisan Distillery. Since opening its doors in 2009, Corsair has received numerous accolades and awards, including being named the 2013 Craft Distillery of the Year and 2013 Innovator of the Year by Whisky Magazine. Corsair's Artisan Gin remains one of the few gins produced using a gin-head (otherwise known as a carter head or vapor basket). This method, allows the flavors and essential oils of the gin's sustainably grown botanicals to be gently extracted using vapor; this technique yields a less bitter spirit than maceration resulting in a more aromatic, clean-tasting gin. This gin head style gin is made using 100% organic botanicals, which yields a brighter, more well-balanced spirit. Using a vapor basket essentially highlights the unique mixture of botanicals use in the spirit, such as citrus, cucumber, cardamom and coriander. Among other accolades, this crisp gin has struck Gold at the San Francisco World Spirits Competition, the World Beverage Competition, and the International Review of Spirits Awards BTI.

Situated in a former microbrewery on a west London street in England, Sipsmith Independent Spirits Distillery is home to London's first new gin in nearly two centuries. The distillery was founded by a triumvirate Sam Galsworthy (who previously worked at a microbrewery), Fairfax Hall (a former Diageo representative) and Jared Brown (a master distiller who has crafted new spirits in Vietnam, Norway, Sweden and the United States) with the goal of producing a traditional yet authentic craft gin. Sipsmith London Dry Gin is crafted using ten carefully selected botanicals, including Macedonian juniper berries, Bulgarian coriander seed, French angelica root, Spanish liquorice root, Italian orris root, Spanish ground almond, Chinese cassia bark, Madagascan cinnamon, Sevillian orange peel and Spanish lemon peel. "The best botanicals make the best gin no way around it," says Brown, who has been distilling spirits for over a dozen years. Once the botanicals arrive at the distillery, they are distilled through a copper-pot still named Prudence (Prudence is able to produce approximately 280 bottles of gin each day). "Prudence is the first copper still installed in London in nearly 200 years. We designed her with Germany's oldest distillery producers, Christian Carl a small, family business that has been crafting stills since 1869. She is the only one like this in the world. "The still is designed with a bespoke pot, column still and carter head, which makes it incredibly versatile. Sloe berries are a hedgerow fruit in the plumb family. Rarely consistent berry seasons yield annual harvests that almost always vary, due to the unpredictable English climate. This variety in harvest is a trait very characteristic of wine, in that each vintage batch that is produced has its own unique character. Each autumn Sipsmith picks their sloe berries, which are then frozen and steeped in their London Dry Gin, for three to four months. This process gives the gin a jammy, marzipan flavorThe result is a truly handmade sloe gin that is subtle, complex and bursting with flavour (Sipsmith).

St. George Gin Dry Rye

Founded in 1982 by German-born Jrg Rupf, St. George Spirits is one of the oldest craft distilleries in the United States. The distillery, housed in an old World War II airplane hangar on a former naval base on the edge of San Francisco, is home to Lance Winters, mad scientist and St. George's master distiller. Winters, who is widely-known for experimenting with different types of spirits, has a laboratory dominated by a 10-liter test still in addition to the glass beakers and graduated cylinders that cover every inch of counterspace. Next to the dusty chalkboards caked with equations for the conversion of sugar to alcohol and intricate diagrams of molecular structures are bottles of experimental whiskies, vodkas and even an aging balsamic vinegar (it's 14 years old already). St. George makes their Dry Rye Gin in the same 1,500-liter copper pot still that they use to make their Terroir and Botanivore Gins. These Gins each have intricate botanicals bills designed to create a layered olfactory experience. St. George's also makes a limited-release, barrel-aged version they call Dry Rye Reposado Gin. Rested in French and American oak wine casks, it has a lovely pink hue and a deep, rich flavor. For their Dry Rye Gin they chose only six botanical ingredients: juniper berries steal the shown this expression, having 50% more than any of their gins. The botanicals are complemented by black peppercorn, caraway, coriander, grapefruit peel, lime peelwhich were all designed to play up the juniper's peppery nature. A base of 100% pot-distilled rye makes for a very unconventional gin, but a unique option for whiskey lovers. This gin has structure, spice, and an impeccably rich mouthfeel. Warm and spicy, it has a natural affinity with bitters, citrus, stone fruit, and ginger (St. George's).

Founded in 2015 by Bobby Finan and Sean Insalaco, the industrial chic distillery opened its doors in July of 2015, in New York's historic Hydraulics manufacturing district. The distillery is named after the Tommyrotters Club, which according to the distillery founders, were a band of rebellious artisans in the early 20th century who broke rank from the Arts and Crafts Movement to create for creation's sake. They sought adventure, mischief and inspiration in nature. Bobby Finan gravitated towards the craft-distilling scene in NYC, and in 2013 he got his first start in the industry at the Cooperstown Distillery. After relocating to his hometown Buffalo in 2014 he met business partner, Sean Insalaco, and by July 2015, Tommyrotter Distillery was up and running. In the spring, summer and fall months, their multi-story distillery is open to visitors. Their beautiful modern glass-walled mezzanine tasting room gives a unique view of the entire production process. At Tommyrotters their production process is simple yet quite meticulous. No frills. No automation. Just handcrafted spirits, distilled batch by batch in small copper stills. Their spirits are distilled from American farm-grown grains. Smaller stills allow for greater control over the distillation process. They fill and label every single bottle by hand. They currently have three award winning expressions in their lineup, one vodka and one American gin, and one barrel aged gin. Their gin is described as being simultaneously juniper and botanical rich. Infused with herbs spices, roots and flowers sourced from all over the world that are harmonized in the distiller's secret recipe. Their impassioned take on an American gin is Pot-distilled in small batches to articulate a deliberate blend of infused herbs, fruits, roots and flowers. Glendalough is an idyllic little town in eastern Ireland. Gaelic for "valley of two lakes," it was said to have been founded by a man named Saint Cemgen also known as Saint Kevin. The Glendalough Distillery, Ireland's first new craft distillery, was set up by five friends from Wicklow and Dublin with a deep passion for reviving the heritage of craft distilling in Ireland. The 18th & 19th centuries there were the glory days of the Irish whiskey industry, with over 200 licensed distilleries in all of Ireland. There were also countless unlicensed distilleries at the time, producing diverse styles of poitn, whiskey, gin and even absinthe. But through a series of unfortunate events, the Irish Whiskey Industry dried to a trickle in the 1970's. Glendalough Distillery is part of a revival of this Irish heritage. Their philosophy is "to make innovative spirits while staying true to the tradition and heritage of our ancestors." Glendalough started out making poitn the traditional Irish distillate made in small pot stills. From there they seamlessly transitioned to whiskey production, and most recently, seasonal,wild botanical gins. All of their production is handmade. Working alongside local forager Geraldine Kavanagh, only the freshest botanical ingredients are foraged in the wild Wicklow country side. Small batches of this award winning seasonal gin are distilled in Holstein copper stills. No more than 3,000 bottles are produced each season, and each season yields a different character, creating something really special. "The unpredictable Irish weather resulting in an ever changing array of botanicals, berries and fruit. Each season will bring a different gin with varying taste and style" (producer).

Four Pillars Gin launched in 2013, and was among the first craft gin distillers in Australia. Founded by wine makers Stuart Gregor and Cameron Mackenzie, alongside brand expert Matt Jones, the group launched the distillery in Yarra Valley just on the outskirts of Melbourne. Four Pillars Gin is distilled by Cameron Mackenzie through the facility's CARL still named Wilma after spending nearly two years researching and experimenting with botanicals, he came up with the final recipe. The gin is comprised of 10 botanicals: juniper, coriander, cardamom, lemon myrtle, star anise, lavender, cinnamon, Angelica, Tasmanian pepper berry leaf, and whole Australian oranges. The Four Pillars states One day our distiller Cam thought, what would happen if you combined Four Pillars Gin with some of the best Shiraz grapes in Australia This is how Four Pillars Gin Bloody Shiraz was born. Approximately around Easter in 2015, Mackenzie steeped the first Yarra Valley Shiraz grapes in high proof Rare Dry Gin for up to eight weeks.The fruits are first de-stemmed, but are kept whole before being pressed and blended with more Rare Dry Gin.The result is a beautiful vintage spirit that is born anew every year. This 2017 release is a more vibrant ruby color than previous expressions, with the same signature Yarra Valley shiraz qualities - earthiness, complexity and subtle white pepper spice, and a balanced sweetness. This gin is highly aromatic with aromas of fresh pine needles, citrus and spice, and distinct peppery, dense raspberry notes. The palate is lovely and sweet with a long juniper and spice character on the finish. This spirit is cut to proof at 37.8% ABV, which is higher than most berry gins.

After serving honorably in World War II, Commander Montgomery "Monty" Collins of the Royal Air Force was discharged in 1951 and moved to the Northern Black Forest where he opened a country guest home nicknamed "The Wild Monkey." The Black Forest area is notorious for producing some of the world's finest fruit liqueurs, and so Collins eventually began experimenting with distillation. In time, he perfected the recipe for his very own gin, which became the signature spirit served at The Wild Monkey until the 1970s. "When I heard about a special gin that contains classical spices and also ingredients from the Black Forest such as spruce shoots and lingonberries, I left my job and began doing research with the aim of bringing this gin back to life," says Alexander Stein, who resurrected Collins' gin. After two years of research and development, Stein, together with master distiller Christoph Keller, settled on a recipe that called for 47 unique ingredients. The ingredients include acacia, acorus, calamus, almond, angelica, bitter orange, blackberry, cardamom, cassia, chamomile, cinnamon, citron verbena, cloves, coriander, cranberries, cubeb, dog rose, elderflower, ginger, grains of paradise, hawthorn berries, hibiscus abelmoshus, hibiscus syriacus, honeysuckle, jasmine, kaffir lime, lavender, lemon, lemon balm, lemongrass, licorice, lingonberries, mondara didyma, nutmeg, orris, pimento, pomelo, rose hip, sage, sloe and spruce. The ingredients are steeped in French-made molasses alcohol for 36 hours prior to being distilled through an Arnold Holstein copper-pot still. Keller combines traditional maceration and distillation techniques, as well as vapor infusing certain ingredients, to gather precise amounts of the more volatile botanicals and accentuate more sublime flavors. Bottled at 47% ABV, Monkey 47 Schwarzwald Gin has an aroma of wood spices, vegetables, citrus and pine. The aroma gives to way to an incredibly complex bouquet of flavors, including earthy spices, fruit, herbs and tart citrus. The finish is rich and bursting, with a hint of lemon balm. Monkey 47 earned the World Spirits Award Gold at the International Wine and Spirits Competition, and was named one of the ten best gins by The Independent. William Grant & Sons in launched the Hendrick's Dry Gin in 1999 as an addition to the portfolio of spirits and brands produced at the Girvan Distillery in South Ayrshire, Scotland. Thus it is famously known as The Scottish Gin. The Hendrick's line was a nearly instantaneous success due to it's unique flavor profile. That profile is achieved principally through two factors the botanical mix and the distillation technique. In addition to the traditional infusions of juniper and citrus, Hendrick's signature botanicals include cucumber and Belgian rose. Distillation is completed in two parts. First the spirit is purified in an antique Carter-Head still which yields a very high initial proof. For the second distillation, the botanicals are added and allowed to steep for 24 hours. Then they are distilled in a small, Bennett pot still which maintains a high proof while allowing the heavier spirits and esters to pass through. This yields a heavier spirits with a desirable oily mouthfeel. This signature base Gin is their core offering and form the base for all of their other products. Their newest release, Hendricks Orbium Gin is a custom formulation by their master distiller Lesley Gracie. Produced in astonishingly small batches of 500 liters each, Orbium is a quininated Gin. This means that, in addition to special extracts of blue lotus blossom snd wormwood, quinine is one of the major infusions. And that makes sense when you remember that the most famous Gin cocktail in the world in the G&T Gin and Tonic. And tonic water is a cocktail mixer made with quinine. In this way it is akin to experiencing a G&T at full strength. The gentle flavors combine to make Hendricks Orbium Gin nearly a cocktail in itself. You can definitely take it as a sipping Gin.
