Doña Vega is founded and produced by Mexican women who set out to make mezcal more accessible and approachable. For two years, through 73 recipes, 22 farms, and too many tastings to count, the Doña Vega team accomplished their goal of creating two exquisite varieties of mezcal. 

Doña Vega is produced in a small town outside Oaxaca – Santiago Matatlán by a family who has passed down the tradition for five generations.

Espadín is chosen for the large majority of all mezcal production in Mexico, however, Espadin Capon is quite rare. Doña Vega harvests the agave plant several years after it has ripened giving the final distillate a natural sweetness which is incomparable to other mezcals.

Hand-selected, handcrafted, and distilled to proof, our Doña Vega Espadín offers a mysterious and delicious drinking experience. Light smoke with undertones of fruit and a white pepper finish, yet remarkably smooth. Doña Vega Espadín is the perfect addition to any cocktail or perfect on its own.

A small family farm on the southwest coast of Ireland and an Irish farmer with a very big dream.

BARLEY FIELDS
We grow our own heritage barley on our family farm in the shadow of the Galley Head lighthouse.

Centuries of sea mist, soft rain and ocean spray provide a complexity to the soil that permeates through to each individual grain.

The Distillers at Clonakilty have hand selected an 8 year old grain and 10 year old triple distilled malt to create this first single batch Clonakilty Irish whiskey. 

TASTING NOTES

Nose: Soft spices, vanilla, fresh cut grass, slightly perfumed, riple apple/pear notes. Fresh leather tones. 

Palate: Warm spices - cubed pepper and ginger. Fresh cut grass, hazelnut and almond notes.

In the 1830’s our Woodford County distillery was the setting for a series of discoveries and innovative practices that today define the bourbon industry. For this 2021 Master’s Collection release Master Distiller Chris Morris and Assistant Master Distiller, Elizabeth McCall have drawn upon that rich history and their own interests for inspiration.

In Kentucky, a fermented grain mash is traditionally called “distiller’s beer”. Distillation converts this “beer” into a spirit that will become a “Whiskey” once barreled.

This Master’s Collection is our take on crafting a spirit that exhibits the flavors of a classic beer style, in this case a rich, roasted malty stout.

“Our distillery building was constructed by Irish stonemasons in 1838. That, plus the fact that we distill in the “Irish” style with triple pot stills inspired us to mash and distill an Irish style stout beer.” – Elizabeth McCall

The result is the Fall 2021 Master’s Collection release named Five-Malt Stouted Mash, a rich and darkly robust expression of Woodford Reserve Kentucky Straight Malt Whiskey. 

TASTING NOTES

APPEARANCE: Antique Orange

NOSE: Dusky notes of roasted malt, toasted nuts all sweetened with hints of milk chocolate and brightened with a touch of orange zest, spearmint and warm baking spices. Oak, cherry cobbler and shortbread round out the malt and barrel influence.

TASTE: Malty with toasted hazelnut and cocoa highlights atop a layer of baked fruit, crisp spice and zest bounce about the depths.

FINISH: Malt and cocoa notes linger on.

Finish: Vanilla, tobacco, lemon curd and raisins. 

About this Chapter 7 Whisky

Cambus, a Lowland distillery, played a key role in the establishment of grain whisky. It began distilling malt in 1806 until owner John Mubray installed two patent stills in 1836. During the 19th century, Cambus expanded to become one of the founding companies of DCL. Its ad in The Daily Mail was critical in swaying public opinion about grain whisky. This led to DCL winning their case against malt distilleries in 1908.

Chapter 7 Whisky has finished a single bourbon hogshead in three octave casks. The octaves had previously held Glen Elgin and Linkwood. This is a well aged, well finished, example of Cambus single grain whisky.

Benrinnes 12 Year Old Tasting Notes

Selim's tasting notes

Nose: Almonds, quince jelly, custard, gooseberries and pancakes.

Palate: Marzipan and bitter almonds. Gooseberries, lemon, and croissants.

Finish: Heather honey, limoncello, lemon drops and butter.

Ed's tasting notes

Colour: Natural colour, deep gold or bronze. Coats the sides of the glass thickly with a lingering tide line.

Nose: Stewed fruit crumble. Apples with forest fruits cooked in spiced syrup, topped with buttery crumble. The crumble has browned and become toasted around the edges. Thick vanilla custard. Backed by malt and oak.

Palate: Thick, syrupy mouthfeel. Bright red fruit and berries with spices and candied orange. Dry oak with a little vanilla. Apples and pears join the red fruit, the longer you hold the whisky on your tongue. At 54% the alcohol is well integrated, adding just a little warmth, and plenty of body.

Finish: Medium, tingling spices are left once the berries and apples disappear.

About this Chapter 7 Whisky

Another great distillery producing meaty character malts for Diageo blends. Benrinnes is popular among independent bottlers. And, rightly appreciated by connoisseurs for its light, fruity character. This release was aged in a bourbon hogshead and then finished in an oloroso hogshead. Rather than going for a 'coloured' result, Chapter 7 Whisky kept the finishing short. This has added magical layer of prunes, sultanas and spices to this already accomplished malt.

About this Chapter 7 Whisky

Built in 1929, Glen Grant's owners John and James had a great impact on the development of the Rothes area. The brothers brought in the railway line from Lossiemouth to Elgin. They personally paid for an extension of the route to Rothes. 

Glen Grant was one of the first whisky brands. You could find Glen Grant in Africa, Australia, and the US in the late 19 century. Glen Grant stills produce a light spirit mainly due to their square boil bulbs. These increase copper surface significantly. Well-aged Glen Grant, such as this release by Chapter 7 Whisky, are known to be complex drams with many layers.

STORY AND INSPIRATION (Written by Neil Giraldo)

When I first began playing guitar, I realized that if I could learn to play three basic chords — the roots of the blues — feel their meaning, and perfect their sound, I could have a career in music. I also recognized that the beauty of the perfect melody, the arrangement of those notes, and the vibrations of those tones, could impact one’s mood and elicit powerful emotions.

One night as I was sipping bourbon in my studio with friends, the conversation naturally turned to music, sound and composition. We began to wonder how blending the “tones” of various whiskeys together could create a unique “harmony” of flavor.

We knew bourbon’s role in Americana music and the American dream. We knew we loved it.  We knew that the blues and the “three chord” progression were a blank score that we could compose our own masterpiece with. Truth, heart, and integrity.

But we wanted to do more than just create another whiskey. We wanted to shake up the industry yet maintain respect for the tradition and legacy of heritage whiskeys. To look at the process differently. To create a taste profile comparable to the finest whiskeys in the world. To craft a new classic whiskey with the same precision and passion with which I create music. The product we created is Three Chord. The process with which it is created we call “Perfectly Tuned Taste.”

Our Tennessee Straight Whiskey is light yet flavorful, distilled and aged at least 36 months. Using the maple charcoal filtration process, we have refined the whiskey to a “Perfectly Tuned Taste.” Just as a three-chord progression is at the foundation of great music, Three Chord Tennessee Straight Whiskey is at the heart of a great spirit.

MASH BILL: 80% Corn / 10% Rye / 10% Malted Barley

COLOR: Rich amber, patinated copper

AROMA: Dark sugar, light smoke, vanilla bean, and bananas foster

MOUTHFEEL: Medium plus, slightly viscous
