Distilled in 1992, this Irish single malt was initially matured in hand-selected bourbon barrels for more than 10 years before being re-casked in 2004 to be finished in PX sherry casks. Bottled without chill filtration at 106 proof, it's a wonderfully mature 29-year-old whiskey.

This exclusive offer is a tribute to one of America’s famous gunsmiths, Henry Deringer, who designed The Philadelphia Deringer, a popular concealed carry percussion handgun of the era. Because of their small size and easy availability, Deringers sometimes had the dubious reputation of being a popular assassin tool. John Wilkes Booth fired the most famous Deringer used for this purpose in President Abraham Lincoln’s assassination. This Bourbon is aged in new charred white oak casks. Minimal batch offering. Wolves is American whiskey made in California from an equally creative group of founders, also based in California.  Wolves is distilled in Sonoma County by 13th generation Master Distiller Marko Karakasevic using an old, slow, brandy still that was imported from Cognac in 1983.

Uniquely, Wolves signature blend consists of whiskey created from refined craft beer, and Rye whiskey.  The flavor profile is unlike anything else on the market.

Wolves is launching The Hotel Series, which are whiskey collaborations with some of the world’s finest hotels. The first release, titled Table 9, is with the Peninsula Beverly Hills.  Table 9 is a variation of Wolves signature blend, with a high-pilsner content, and is named after the most sought after the table in the hotel.

The bottle will not be sold to the public and is initially available exclusively in the hotel.  Certain Wolves clients will be invited to purchase a bottle as well.  320 bottles were produced.

In celebration of the partnership, Michelin-starred chef of The Peninsula, Ralf Schlegel, prepared a private, four-course dinner experience at the hotel, with each course paired with a different Wolves expression.

Bail Hayden 10 Year Old Bourbon Whiskey is a special, extra aged seasonal offering that will be made available as a limited edition whiskey each holiday season. Bottled at 80 proof, the extra maturation of this high rye bourbon in American oak barrels is said to offer “an additional layer of complexity” that “delivers heightened oak aromas along with hints of char and vanilla while maintaining Basil Hayden trademark spice in every sip.”

We employ a four grain mash bill of corn, barley malt, wheat and rye to achieve a softer bourbon that emphasizes malt and rye. Expressions unique to each barrel of spiciness on the nose with a long finish of butterscotch, caramel and tobacco.
