Hillrock Single Malt Whiskey

In the early 1800's, the State of New York was responsible for the production of more than half of the barley and rye harvested in the United States. The Hudson Valley, which extends from New York City northward through Albany, was the country's original breadbasket and was home to thousands of farms, hundreds of which distilled the excess grains they harvested into whiskey. In the 1930's, the onset of Prohibition forced these farmers to abandon their stills. Today, in a 19th century Georgian mansion situated in the heart of the Hudson Valley, Master Distiller Dave Pickerell pays homage to the New York farmers who produced their whiskey from grains to glass. Pickerell, who graduated from West Point with a Bachelor's degree in Chemistry, served in the military for 11 years as a cavalry officer before receiving his Master's degree in Chemical Engineering from the University of Louisville. Then, Pickerell served as Master Distiller at Maker's Mark in Loretto, Kentucky for 13 years. There, he was responsible for ensuring the quality and consistency of Maker's Mark Bourbon. A former chairman of the Kentucky Distillers Association and a member of the Distilled Spirits Council, Pickerell is an expert nonpareil in the production of whiskey. Hillrock Estate Peated Single Malt Whiskey is one of the first single malt whiskies produced in New York since Prohibition. It is made using barley that is grown exclusively on the rolling fields of the Hillrock Estate. After the barley is harvested, it is smoked over a peat flame for approximately eight hours (the peat used to smoke the barley is imported from Scotland). After the barley has been peated, it is fermented before being distilled through Pickerell's custom-made, 250-gallon copper-pot still. Following distillation, Hillrock Peated Single Malt is aged in American oak casks before each batch is brought to proof and bottled by hand. The whisky has a light aroma of smoke, peat, iodine and sea salt that gives way to rich vanilla and malt on the palate. The finish is long and rich, with hints of honey, caramel and butterscotch complemented by a subtle peaty undertone.

Lagavulin 12 Year Old Cask Strength Single Malt Scotch Whisky

Situated on the banks of Lagavulin Bay on the island of Islay, Lagavulin Distillery is one of the oldest distilleries in Scotland. Distilling took place on the banks of Lagavulin Bay as early as 1742, and by the turn of the century, there were as many as ten illicit stills operating in the area. In 1816, John Johnson founded the first legal distillery on the site, and within a year Archibald Campbell had opened a second. After Johnson's death, Alexander Graham acquired Johnston's distillery for 1,100 and eventually united the two distilleries together under the Lagavulin name. Since that time, the rich, peaty water that runs down the brown burn and through the Solan Lochs into the hills just next to Lagavulin Bay has served as the lifeblood of the distillery. Lagavulin Single Malt Scotch Whisky is known as one of the most intense, smoky single malt whiskies ever made the peated barley used to create Lagavulin Single Malt has up to twenty times as much exposure to peat smoke as compared to typical Scotches. Once the grains used to craft Lagavulin Whisky have been harvested and malted, they are dried over a peat and gas fire calibrated specifically to produce Lagavulin's signature, bold flavor profile. Then, the grains are milled and mashed before being fermented for approximately 72 hours. Following fermentation, the whisky is distilled twice first through a wash still for approximately five hours and then again through a spirit distill for approximately nine hours. This is the slowest distillation process of any Islay distillery, and gives Lagavulin its characteristic round flavors and mellow edges. Following distillation, Lagavulin 16 Year Old Single Malt Scotch Whisky is matured for sixteen years in second-fill, American oak casks that were previously used to mature bourbon. As a result of this maturation process, together with the unique barley-drying process used at the distillery, the single malt has an intense aroma of peaty smoke, wood spices and Earl Gray tea. The aroma gives way to notes of peat, rich smoke and salty tang on the palate, which are balanced by subtle notes of vanilla and honeyed oak. The finish is incredible and intense, with complex notes of sweet caramel and fruits belying bolder notes of peat and smoke. Lagavulin 16 Year Old Single Malt Scotch Whisky has earned six Double Gold Medals at the San Francisco World Spirits Competition, and was named the "Best Single Malt Whisky (13-19 Years)"at the 2013 Competition.

The term "Kavalan" refers to some of the earliest inhabitants of Taiwan, who settled the modern-day Yilan County during the 16th century. Legend has it that the Kavalan arrived by sea from the east and upon seeing the stunning beauty of Taiwan, decided to settle the bountiful land. Kavalan Taiwanese Single Malt Whisky is crafted by the King Car Group, which was established in Taiwan in 1956. The whisky is made entirely in Taiwan from malted barley that is imported from Scotland. Once the grains arrive in Taiwan, they are milled and mashed, before being fermented with water drawn from springs situated in the Central and Snowy Mountain ranges. This incredibly pure and quintessentially Taiwanese water source adds slightly mineral, round flavors to the whisky. Following fermentation, the wash is distilled through lantern-shaped copper-pot stills that were previously used at the Glenlivet Distillery. Due to the small size and shape of the stills, the whisky interacts with the copper, resulting in an incredibly pure and fruity flavor profile. After the whisky has been distilled, it is matured in used American oak wine barrels that have been toasted and recharred. These barrels, which have aged both red and white wine, lend notes of fruit, vanilla, and oak to the whisky, as well as caramel, chocolate and spice, leading to an elegant, brown sugar finish. Kavalan Solist Vinho Barrique Cask Strength Single Malt Whisky was named the World's Best Single Malt Whisky at Whisky Magazine's 2015 World Whiskies Awards. It also received the Double Gold Medal at the 2012 San Francisco World Spirits Competition.

Nikka Miyagikyo Single Malt Whisky

In 1895, Masataka Taketsuru the father of Japanese Whisky was born in the small town of Takehara, Japan. At the time, Masataka's family owned a sake brewery, and in preparing to carry on the family trade, Masataka studied chemistry and biology at Osaka Technical High School. After graduating high school, Masataka showed more interest in whisky than in sake and in 1918, he enrolled at the University of Glasgow in Scotland, becoming the first Japanese ever to study the art of whisky-making. While in Scotland, Masataka took chemistry courses during the day while apprenticing with distilleries at night, learning to distill and blend whisky first-hand at some of Scotland's most prestigious distilleries. In 1920, Masataka returned to Japan, and within the decade, had produced the country's first single malt whisky. In 1934, Masataka moved to the town of Yoichi and opened the doors to Nikka Whisky Co. Situated approximately 35 miles west of Sapporo City, Nikka's Yoichi Distillery is encapsulated by mountains (to the east, south and west) and by the Sea of Japan (to the north), creating a unique and isolated environment for the production and maturation of single malt whisky. The clean air, humidity and access to underground water filtered through a layer of peat results in a rich and masculine malt. In 1960, as the Yoichi Distillery was reaching capacity, Masataka began searching for another suitable location in Japan to open a distillery. Following a three-year search, Masataka identified a wide forest valley at the junction of the Hirosegawa and Nikkawagawa rivers. The localized humidity from the rivers and surrounding hills, together with the quality of water from Nikkawagawa River, created the perfect location for a second distillery, which he named Miyagikyo. Nikka Miyagikyo Japanese Single Malt Whisky is distilled and aged at the Miyagikyo Distillery, which is known for its lighter, more floral malts (as opposed to the heavier, more oily malts produced at Yoichi). Made from 100% malted barley and distilled in pot stills that are heated with steam as opposed to coal fire, Nikka Miyagikyo Japanese Single Malt Whisky is then aged in ex-sherry casks. As a result, the whisky has a delicate and modern aroma of bitter green apple, citrus zest, nougat and ginger, which leads to a palate filled with vanilla custard, nutmeg and cinnamon, along with a subtle smokiness. The finish is light and smoky, with notes of dried mango, breakfast cereal and honey.

The Macallan Gold 1824 Series Single Malt Scotch Whisky

Situated on a ridge above the banks of the River Spey, the Easter Elchies House has been the spiritual home of The Macallan for over three centuries. In 1820, Alexander Reid began renting the home from Sir Lewis Grant of Grant. Reid was a farmer, and soon after he sowed the fields surrounding the home with barley, Reid established the first licensed distillery on the estate, which he named Macallan after an ancient church that had been destroyed by fire during the 15th century. In the winter when there was little activity on the farm Reid would ferment and distill his excess grains into whisky, which was often drunk straight from the still or sold to travelers passing through the town. Today, the Macallan Estate encompasses 370 acres, 95 of which are devoted to the production of the Macallan Estate's Minstrel barley (a single acre produces about 2.5 tons of barley each year, enough to yield 1,800 bottles of The Macallan). In addition, the distillery contracts with farmers to purchase barley that is low in nitrogen and high in starch, resulting in a rich and oily whisky. After the barley is harvested in late August and early September, it is malted before being mashed in one of The Macallan's two mash tuns, a process that takes between four and eight hours. Then, the barley is fermented with a specially cultured yeast before being distilled twice through The Macallan's copper-pot stills. The copper comprising the stills acts as a catalyst, and enhances the formation of sweet esters while minimizing impurities such as sulphur. In addition, the curiously small stills some of "the smallest stills within the Scotch whisky industry," according to production manager Alexander Tweedie produce a whisky with a heavy, oily flavor. The Macallan M Single Malt Scotch Whisky was crafted from a marriage of seven unique casks of Macallan, each of which was personally selected by Macallan's Master Whisky Maker after more than two years of searching through the Macallan's vast cellars of over 195,000 barrels. Each cask (the oldest whisky was distilled in 1940) was previously used to mature Oloroso sherry. As a result, the whisky as a deep copper color, along with an aroma of dried fruits, vanilla, green apples, cinnamon, nutmeg and ginger. Rich, viscous wood spices dominate the palate, and are complemented by undertones of leather, cedar and violets.

Springbank 12 Year Old Burgundy Wood Single Malt Scotch Whisky

Almost two centuries ago, a small fishing port by the Campbeltown Loch on the Kintyre peninsula was considered the whisky capital of the world. Passengers arriving by sea at Campbeltown Loch nestled between Macringan's Point and the rocky island of Davaar were greeted with the sails and masts of the herring fishing fleet and the smoking chimneys of nearly thirty different distilleries that called Campbeltown home. Two hundred years later, Campbeltown Loch is considerably quieter and only three chimneys continue to billow smoke each acting as a beacon for an industry that, at one point, dominated the peninsula. Campbeltown is home to the Springbank Distillery, which was founded in 1828, on the site of Archibald Mitchell's illicit still in Campbeltown (the distillery is currently owned by Mitchell's great-great-great-grandson). Springbank garnered such a great reputation for its premium quality whiskies, and by the turn of the century as worldwide demand for Scotch whisky seemed insatiable distilleries throughout Scotland began cutting corners and outsourcing parts of the distillation process. Springbank Distillery, however, remained true to its Scottish heritage and today, remains one of only two distilleries in Scotland to perform every step of the whisky making process from malting barley to bottling whisky on the same premises. After malting and lightly peating the barley (using locally cut peat), the distillers at Springbank mill and mash it in cast-iron mash tuns that are nearly a century old. The pure spring water used during the mashing process is sourced from Crosshill Loch, which in turn is fed by springs seeping from the northern slopes of 1,100-foot tall Beinn Ghuilean. After mashing the grains, the wash is slowly fermented over the course of 70 hours one of the longest fermentation processes in Scotland before being distilled. Because some of the wash is distilled twice and some is distilled three times, Springbank Whisky is said to be distilled two and a half times. Introduced in 2016, Springbank 12 Year Burgundy Wood is a special single malt, aged for 12 years in ex-wine casks from Burgundy, France. A limited 10,260 bottles were released. With mid-peaty notes, and flavors of French wine, this special release is bottled at a respectable 53.3% ABV.

Founded in 2010 in Seattle, WA, Westland Distillery mashes, distills, matures and bottles American Single Malt Whiskey in the heart of the Pacific Northwest. Situated in the SoDo neighborhood of Seattle, Westland's 13,000 square foot distillery boasts a 5,000 mash-house, five 10,000 liter fermenters and two copper pot stills. It's here where Westland's Master Distiller Matt Hofmann crafts the distillery's core American Single Malt Whiskey. Like single malt Scotch, American single malt whiskey is made using a malted barley made at a single distillery. American single malt whiskeys, however, are less regulated, allowing more room for experimentation. With a specialty mash bill of Washington Select Pale Malt, Munich Malt, Extra Special Malt, pale chocolate malt, brown malt, and peated malt, their specialty Garryana-aged single malt is fermented with Belgian Brewer's Yeast for a total of 144 hours, and aged partially in a distinct oak. Garryana is the embodiment of provenance, an expression of the Pacific Northwestboth its land and its culturein whiskey (producer). This limited edition series of bottlings explores the nature of the unique species of native oak, Quercus garryana (also known as Garry or Oregon oak), and its unique influence on the cornerstone elements of Westland's distinctive house style of American single malt. This 2018 edition of Westland's single malt Garryana whiskey is comprised of 52% pale malt aged in 1st fill ex-bourbon Quercus alba, 27% Westland's proprietary five malt aged in Virgin Quercus alba (new American oak), and 21% pale malt aged in Virgin Quercus garryana. Glenmorangie The Pioneering Collection Single Malt Gift Set

In 1738, a brewery was built upon Morangie Farm in the Highlands region of Scotland. A century later, William Matheson acquired the farm and equipped the Morangie brewery with two stills that he purchased second-hand, and renamed the brewery-converted-distillery Glenmorangie. Glenmorangie Single Malt Scotch Whisky is made using malted barley, which is germinated with water sourced from the Tarlogie Spring. The water produced from the spring, which spends nearly a century underground before it is extracted, is unusually rich in minerals. (In the 1980s, when development in the area threatened the spring's water quality, the distillery purchased 600 acres of land around and including the spring, to ensure consistent water quality and adequate supply.) After germination, the grains are mashed and fermented before being twice distilled through Glenmorangie's copper-pot stills. The stills are equipped with relatively small boiler pots, which increases the exposure of the whisky to the copper, resulting in a more pure flavor. Also, the stills are nearly seventeen feet tall the tallest of any distillery in Scotland and as a result, produce a lighter, more refined whisky. The meticulous attention to detail during distillation ensures the impeccable quality of each of their whiskies. Glenmorangie has long been known for its expertise in wood, and three decades ago they pioneered the art of extra-maturation, which consists of transferring spirit first matured in ex-bourbon casks, into ex-wine casks, enhancing the flavor profile with extra layers of character. Each expression in the Glenmorangie core range has a unique and nuanced flavor profile, aged in their signature, extra-maturation style. The Pioneering Collection is a beautiful selection of these four critically acclaimed single malt whiskies: the 10 Year Original, LaSanta 12 Year, Quinta Ruban 12 Year, and Nectar Dor 12 Year cask finishes. This beautiful flavor profile earned the whisky Gold medals at the 2016 IWSC, and 2017 ISC. Nectar Dor 12 Year is a sterling example of when can be achieved with a harmonious balance between French casks and Scotch whisky. This single malt was finished in hand-selected wine barriques sourced from Sauternes, the most famous sweet wine growing region of France. Nonchill-filtered, this decadent whisky also won a Double Gold Medal at the 2017 SFWSC.

Nestled amongst the rolling hills of the Cotswolds countryside, the Cotswolds Distillery was born from a dream to produce delicious spirits in one of the most beautiful regions in the world.

From hedgefunds to HEDGEROWS
It all started back in 2014, when our founder Dan, a native New Yorker and whisky connoisseur, had moved to the Cotswolds after working in finance in London for many years. Seeking to leave behind that world and spend more time in the picturesque countryside of the Cotswolds with his family, it eventually dawned on him that he could combine his love of whisky with his desire to start a new business. A dedicated whisky fan, Dan saw the fields of golden barley around his house in the Cotswolds and had a brainwave ‘I suddenly thought, there’s barley all over the Cotswolds and nobody’s distilling it, let’s be the first!’ Having found a derelict site near his house, he set about building a distillery and a team to run it, and the doors of the Cotswolds Distillery opened in July 2014.

Launching our WHISKY
After three years of eager anticipation, in October 2017 we released our Cotswolds Signature Single Malt Whisky, the first whisky ever to be distilled in the Cotswolds and the one which remains at the heart of our DNA. In the years since its launch, we have expanded our range of single malt whiskies to include our Cask Collection comprising four unique cask expressions, a yearly limited edition Hearts & Crafts series drawing inspiration from the Arts & Crafts movement, and hand-picked single cask releases.

Our Sherry Cask Single Malt Whisky is a marriage of carefully selected and blended sherry casks and features in our Cask Expressions Collection. Each yearly batch is unique, drawn from the finest American and Spanish oak hogsheads and butts, some of which have been seasoned with dry Oloroso sherry and others with sweet Pedro Ximénez. All have been sherry-aged through their full maturation for a deeper and more flavourful whisky. Full of dried fruits, chocolate and a touch of spice.

The first whisky ever made in the Cotswolds, our award-winning Cotswolds Signature Single Malt Whisky is crafted using the finest locally grown, traditionally floor-malted Cotswold barley. Belonging to our Classics Collection, our Signature Single Malt favors the rich and bold, fruity notes which result from maturation in our highly active STR (Shaved, Toasted and Re-charred) ex-red wine barriques. Blended with whisky matured in premium first-fill ex-Bourbon barrels, this single malt has notes of honey, red fruits and a hint of treacle.

Wood: STR (Shaved, Toasted and Re-charred) American oak ex-red wine casks and premium first-fill ex-Bourbon barrels.

TASTING NOTES

Nose: Honey and butterscotch layered with light fruits (peaches & apricots) and a hint of marzipan.

Palate: Strong notes of tannin-rich malt, oils and dark sugar with lots of spice, caramelized Seville orange marmalade.

Founded in 1982 by German-born Jrg Rupf, St. George Spirits is one of the oldest craft distilleries in the United States. The distillery, housed in an old World War II airplane hangar on a former naval base on the edge of San Francisco, is home to Lance Winters, mad scientist and St. George's master distiller. Winters, who is widely-known for experimenting with different types of spirits, has a laboratory dominated by a 10-liter test still in addition to the glass beakers and graduated cylinders that cover every inch of counterspace. Next to the dusty chalkboards caked with equations for the conversion of sugar to alcohol and intricate diagrams of molecular structures are bottles of experimental whiskeys, vodkas and even an aging balsamic vinegar (it's 14 years old already). According to St. George Master Distiller Lance Winters, St. George Single Malt Baller Whiskey is a California take on the Japanese spin on Scotch whisky. It is crafted from 100% American barley, mostly made of two-row pale malted barley, the remainder lightly roasted. The whiskey is filtered through maple charcoal and matured for 34 years in ex-bourbon and French oak wine casks, before being finished in umeshu barrels, a Japanese style of plum liqueur crafted from 100% California-grown ume fruit. The distinctive label, which re-imagines the legend of St. George as a samurai was designed by Oakland artist Sylvia Solochek Walters, and calligraphy by Eri Takase of Takase Studios.

In 1895, Masataka Taketsuru the father of Japanese Whisky was born in the small town of Takehara, Japan. At the time, Masataka's family owned a sake brewery, and in preparing to carry on the family trade, Masataka studied chemistry and biology at Osaka Technical High School. Upon matriculation, however, Masataka showed more interest in whisky than in sake and in 1918, enrolled at the University of Glasgow, becoming the first Japanese ever to study the art of whisky-making. While in Scotland, Masataka took chemistry courses during the day while apprenticing with distilleries at night, learning to distill and blend whisky first-hand at some of Scotland's most prestigious distilleries. In 1920, Masataka returned to Japan, and within the decade, had produced the country's first single malt whisky. Deeming the terroir perfect for whisky production, Masataka moved to the town of Yoichi in 1934 and opened the doors to Nikka Whisky Co. Yoichi is encapsulated by mountains (to the east, south and west) and by the Sea of Japan (to the north), creating a unique and isolated environment for whisky-production. The clean air, humidity and access to underground water filtered through a layer of peat results in a rich and masculine malt. Years later, Masataka established the Miyagikyo Distillery, which is also situated in northern Japan. Surrounded by mountains and two rivers, the Miyagikyo Distillery produces a more mild and feminine whisky as compared to Yoichi. This Yoichi single malt is full of pleasant peaty notes and smokiness, resulting from the traditional direct coal-fired distillation. The whisky also has subtle briny notes imparted onto the spirit by the sea breeze during the aging process.

According to Indian mythology, when Gods and Rakshasas, or demons, churned the oceans inside Mount Meru (a mythical mountain thought to be the center of physical, metaphysical and spiritual worlds), a golden pot containing the nectar of life sprang out of the mountain. The nectar was called "Amrut," which literally translates into "immortality." Amrut Distillery traces its history back to 1948 when, just one year after India declared its independence from Great Britain, Radhakrishna Jagdale began manufacturing rum and brandy, which he supplied to army canteens throughout India. After his death in 1976, the mantle was passed to his son, Neelakanta Rao Jagdale. When the younger Jagdale became Chairman of Amrut Distillery, he began experimenting with more innovative whiskies. Amrut Peated Single Malt Whisky is made from Indian barley grown at the foothills of the Himalayan mountains in a region known as Punjab (Punjab means "the land of five rivers), and peated malt sourced from Scotland. The Himalayan mountain water, along with the cold winters and fiery summers, result in a unique type of barley that is rich in nutrients and flavor. After local Indian farmers harvest the barley, it is carefully mashed and distilled in small batches to preserve the natural aroma of the Indian terroir. The whisky is then aged at an altitude of 3,000 feet above sea level in oak barrels that are laid to rest for a minimum of 4 years. During maturation, the incredibly intense Indian sun causes the whisky and oak to mingle often. In addition, the heat also leads to much greater rates of evaporation approximately 12% of maturing whisky evaporates each year in India (this is referred to as the angel's share), compared to just 2% in Scotland. As a result of the intense temperatures and humidity, whisky ages nearly three times faster in India as compared to Scotland. Pick up your bottle today!

Each is special in craftsmanship and in the unique, artistic decanters crafted of fine French crystal by the famous House of Lalique. Macallan M Black takes this superior level of presentation a bit further in that not only is this a gently peated dram almost unheard of at Macallan but the decanter is cut from black crystal. So here we have a combination that will likely be one of the most collectible single malt whiskies of the year.

Very Old Scout is steeped in the tradition of the Highland Valley. Little sourced some of the last mature stocks of bourbon from Lawrenceburg Distillers Indiana and has been secretly blending them in a special cuve. The result Very Old Scout 11-Year-Old Straight Bourbon Whiskey is a marriage of an eleven year, twelve year and thirteen-year-old bourbon. This select, 13YO Old Scout Single Barrel is a single barrel release distilled from 84% corn, 8% rye, 8% malt. A low-rye bourbon mash bill from TN. Using a continuous column distillation process.
