Our Double Cask whiskies are aged in two types of oak, in specially selected hand-crafted casks seasoned with dry Oloroso sherry. American oak imparts delicate flavours of vanilla, citrus and butterscotch. European oak delivers the unmistakable subtle spice of The Macallan. Once matured, two exceptional whiskies unite to create a distinctive single malt with a sweeter, warmer taste and character. Enjoy it neat, over ice or in a serve.

THE EXPERIENCE

COLOUR: Amber honey.

NOSE: Dried fruit, ginger and toffee. Rich orange with hints of clove and nutmeg.

PALATE: Rich raisin and sultana with notes of caramel, vanilla and ginger, balanced by wood spice and zesty citrus.

FINISH: Warm oak spice with ginger, turning to sweet orange.

Steve McCurry has been one of the most iconic voices in contemporary photography for more than 30 years, with scores of magazine and book covers, over a dozen books, and countless exhibitions around the world to his name.

He followed our journey of The Macallan cask from its origins in the forests of America and Europe, through the cooperages and Bodegas of Spain, and to our distillery in Speyside, Scotland. There the casks meet our new make spirit and are patiently matured until they are harmoniously united to create a distinctive single malt with a sweeter, warmer taste and character.

Our reputation for the extraordinary is characterised by the exceptional oak casks for which The Macallan is renowned. Sourced, crafted, toasted and seasoned under the watchful eye of the Master of Wood, the hand-picked casks are delivered to the demanding specifications of the Whisky Mastery Team. It is the oak that makes the greatest contribution to the quality, natural colour and distinctive aromas and flavours at the heart of this single malt whisky. Once filled, the maturing spirit remains undisturbed in the same casks for the necessary number of years it needs to be worthy of its destined Macallan expression. The Macallan Classic Cut 2020 Edition Single Malt Scotch Whisky

Situated on a ridge above the banks of the River Spey, the Easter Elchies House has been the spiritual home of The Macallan for over three centuries. In 1820, Alexander Reid sowed the fields surrounding the rented home with barley and established the first licensed distillery on the estate, which he named Macallan after an ancient church that had been destroyed by fire during the 15th century. In the slow winter days, Reid would ferment and distill his excess grains into whisky, which was often drunk straight from the still or sold to travelers passing through the town. Today, the Macallan Estate encompasses 370 acres, 95 of which are devoted to the production of the Macallan Estate's Minstrel barley (a single acre produces about 2.5 tons of barley each year, enough to yield 1,800 bottles of The Macallan). In addition, the distillery contracts with farmers to purchase barley that is low in nitrogen and high in starch, resulting in a rich and oily whisky. After the harvest, the barley is malted and mashed in one of The Macallan's two mash tuns, a process that takes between four and eight hours. Then, the barley is fermented with a specially cultured yeast before being distilled twice through The Macallan's copper-pot stills. The copper comprising the stills acts as a catalyst and enhances the formation of sweet esters while minimizing impurities such as sulfur. In addition, the curiously small stills — some of "the smallest stills within the Scotch whisky industry," according to production manager Alexander Tweedie — produce a whisky with a heavy, oily flavor. Following distillation, The Macallan distillers remove the heads and tails of the whisky and collect approximately 16% of the spirit to fill into casks for maturation. This "cut," which is among the highest of any Scottish distillery, results in a more full-bodied and richer whisky. Now in its fourth incarnation, The Macallan Classic Cut 2020 Edition is bottled at a higher 110 proof in order to let the full flavor to shine. This time their Whisky Mastery Team, headed by Polly Logan, explores different cask types for the first time in the series. A combination of sherry-seasoned European oak casks and ex-bourbon American oak casks was used to craft its unique profile that has "a sweet lightness brought by the ex-bourbon oak casks, intertwined with the depth and complexity created by The Macallan’s signature sherry-seasoned oak casks."

After its maturation, the whisky was bottled in 2013. The single-barrel whisky has an aroma of vanilla, raisins, toasted almonds and a touch of caramel. The aroma gives way to notes of dried fruits, particularly cherries and strawberries, along with hints of dark chocolate, warm spices and Christmas cake. The finish is long and smooth, and ends with a touch of creamy vanilla. Founded in 1824, The Macallan is one of the Big 3 single malts in Scotland the other two are Glenfiddich and Glenlivet. Fortunately, Macallan has achieved this scale without sacrificing quality. A change in UK labeling laws aced them out of their Speyside designation. But just because the British Parliament gerrymandered the official boundaries doesnt mean whiskey-lovers have to pay any attention. Macallan single malts are famous for their classic Speyside style and the heavily sherried influence of their core rage. The Macallan has been creating single malt whisky for so long at such a high volume and such a high level that they have what sports teams call a very deep bench. Their incredible inventory of rare, aging single malt gives them the ability to pinpoint flavors and special editions for the refined whisky palate that satisfy a huge, global following. Their achievements are numerous, including setting the record price ever paid at auction for a single bottle of scotch at auction this year. At the higher end of the Macallan line is the Masters Decanter Series, of which there are four The Macallan Reflexion, The Macallan no.6, The Macallan M, and The Macallan M Black. Each is special in craftsmanship and in the unique, artistic decanters crafted of fine French crystal by the famous House of Lalique. Macallan M Black takes this superior level of presentation a bit further in that not only is this a gently peated dram almost unheard of at Macallan but the decanter is cut from black crystal. The Macallan M Single Malt Scotch Whisky was crafted from a marriage of seven unique casks of Macallan, each of which was personally selected by Macallan's Master Whisky Maker after more than two years of searching through the Macallan's vast cellars of over 195,000 barrels. Each cask (the oldest whisky was distilled in 1940) was previously used to mature Oloroso sherry. As a result, the whisky as a deep copper color, along with an aroma of dried fruits, vanilla, green apples, cinnamon, nutmeg and ginger. Rich, viscous wood spices dominate the palate, and are complemented by undertones of leather, cedar and violets.
