Based in Frisco, Texas, Devils River Whiskey was founded by Mike Cameron, co-founder of Rebecca Creek Whiskey, and president of the Texas Distilled Spirits Association. Their 90-proof bourbon is crafted from the pure Devils River spring waters. The illustrious Texas Ranger John Coffee Hays was one of the first explorers to come across it and named this impressive waterway the "Devils River" in 1840. Nowadays the naturally-filtered limestone spring water is considered the purest water in Texas. In college, Cameron would take frequent trips to the feisty Southwest Texas river, the tributary of the Del Rio that would inspire the name of his new whiskey label as well as provide a pure foundation for the whiskey. Devils River whiskey is distilled using a signature method - traditional copper pot stills designed for distilling complex, flavorful, dark spirits. Devils River Rye Whiskey is their Bourbon's spicier brother. Crafted as Devils River's answer to the recent cry for more rye whiskeys, this small-batch affair is also their way of paying tribute to American whiskey. It consists of a mash of 51% rye, 45% corn, and 4% barley, which results in an exquisitely balanced taste profile with prominent spice, as well as notes of vanilla, apples, and pepper. The spice balances perfectly with the sweetness of honey and maple and brings some undertones of wood and pepper. 

When the Widow Jane team set out to produce their own whiskey they wanted to offer something that was flavor-forward, bold and rich with character, but most importantly had a taste of New York. All Widow Jane whiskeys are proofed with pure limestone water from the legendary Rosendale Mines of NY, just 100 miles north from their home in Red Hook, Brooklyn. It was limestone from this mine which was used to build the foundation of some of New York's greatest structures: the gargantuan caissons of the Brooklyn Bridge, the Empire State Building, and the 27,000-ton pedestal to the Statue of Liberty. This self-renewing source of water is naturally filtered through limestone and collects in the massive underground caverns. Comprised of an unusually high mineral content that enhances the natural flavors in Widow Jane spirits, this water is their fingerprint and a signature ingredient. And the legend surrounding these mines is what gives Widow Jane whiskey its name. The result is some of the finest aged Bourbon you will find, and a tasting experience complete with beautiful aromas, a smooth and creamy mouthfeel, and an ultra-long finish. It is a blend of some of their most legendary bourbons that has been finished in Crown Maple's Maple Syrup Barrels. Crown Maple is a premium brand of maple syrup that hails from an artisanal organic maple farm in New York's Hudson Valley. Finishing this blend in ex-maple syrup barrels imparts a distinct flavor and makes for a truly unique drinking experience. The end result is a whiskey that is exceptionally rich and creamy with a prominent sweetness that is as decadent as the name implies. 

Heaven's Door Whiskey is a collaboration with Bob Dylan that came to be in 2018 when industry veteran Marc Bushala and Master Blender Ryan Perry teamed up with the music icon. This award-winning collection features an inspired bottle depicting the distinctive iron gates that were created by Dylan in his studio, Black Buffalo Ironworks. The unique gates were handcrafted from objects discovered across America. This incredible label has a core lineup of highly acclaimed whiskeys. Their Straight Tennessee Bourbon has a unique mash bill from Tennessee, utilizing 30% "small grains" to complement the character imparted from spending a minimum of 8 years in American oak barrels. The result is smooth and lasting with notes of vanilla and baked bread layered over a bed of toasted oak. On the other hand, the award-winning Straight Rye Whiskey gets its rest in toasted oak cigar barrels, air-dried in the low-lying mountain region of Vosges, France. This unique, proprietary finishing creates a smoother, incredibly approachable rye with notes of citrus, coriander, and spice. Heaven's Door Highway 61 is a limited-edition expression that is a blend of 5 different juices: 3 different batches of their Tennessee Bourbon and 2 batches of Straight Rye Whiskey. Heaven Hill distillery was founded in 1935, immediately after Prohibition ended in the United States in 1933, after a group of investors, including the famous Joseph L. Beam, decided to be ready for the rebounding market. Heaven Hill is located on a massive estate boasting 22 multi-story rick-houses across hundreds of acres of land. Now known as the "Heaven Hill Bernheim Distillery" they have the second-largest inventory of Bourbon Whiskey in the world. It is also the only remaining large-scale family-owned distillery in Kentucky. In 1837, Henry McKenna emigrated from Ireland to the United States. After spending nearly two decades as a farmer in Kentucky, McKenna founded an eponymous distillery in 1855. At the time, McKenna focused on the production of wheat whiskey (the only crop he was harvesting at the time) and was able to distill enough whiskey to fill one barrel each day. As word of McKenna's high-quality whiskey spread, McKenna was able to triple his distillation capacity and began experimenting with the production of bourbon. Following his death in 1893, McKenna's three sons Daniel, Stafford and, James began operating the business. The 80-proof Henry Mckenna Bourbon Whiskey honors the rich family tradition and pioneering spirit of Henry McKenna, one of the founding fathers of bourbon. He was among the first to age his whiskey in new, charred American oak barrels. Aged for a minimum of 4 years, it has a mash bill of 75% corn, 13% rye, and 12% barley and is bottled at 80 proof. The oak, vanilla, and butterscotch on the nose are accompanied by floral, citrusy, and cinnamon notes. The mouthfeel is quite creamy and the oak and vanilla are joined by pepper and nutty overtones. There's a well-balanced sweetness with caramel and dried fruit. The finish is medium and slightly warming.

During the late 19th century, an overwhelming number of distilleries throughout the United States were still not aging their whiskey. As a result, some retailers would add juices and syrups to sweeten the whiskey, while others would add acid and tobacco to give their whiskey its signature amber hue. In 1870, George Garvin Brown a young pharmaceuticals salesman from Kentucky saw the need for a consistently high-quality whiskey that would remain unadulterated after distillation. After saving $5,500, Brown and his brother opened the doors to J.T.S. Brown & Bro. Distillery and began distilling bourbon. Unlike other distilleries at the time, Brown aged his bourbon, which was named Old Forester, in oak casks and bottled it in a sealed glass bottle to ensure authenticity and quality. Since its introduction in 1870, Old Forester has been on the market continuously, even during Prohibition, when it continued to be sold for medicinal purposes. It is the only bourbon continuously distilled and marketed by the founding family before, during and after Prohibition. The Old Forester Signature 100 Proof Bourbon is a tribute to founder George Gavin Brown, carrying his signature on the label he would sign all the bottles himself in the olden days. It's made from a mash bill of 72% corn, 18% rye, and 10% malted barley and bottled at 100 proof. It's a well-balanced affair with plenty of caramel, cherry, and oaky spice, along with some coffee and chocolate on the nose. The rich palate adds to that some fruity notes, nuts, maple syrup, and caramel. Finishes spicy and complex with pepper, cloves, nutmeg, and oak. Grab a bottle today!

Bourbon that meets these requirements and that has been aged for a minimum of at least two years may be called straight bourbon. Very Old Barton is a Kentucky straight bourbon that has been matured for an average of four to six years in charred, American oak casks before being bottled at 100 proof. As a result, the bourbon has a rich amber color along with an aroma of vanilla beans and chewy leather. Notes of rich caramel, nougat, rye spices and toffee dominate the palate, and lead to a bold finish. The bourbon was named one of the "Best Budget Bourbons" by Serious Eats and "Best Buy Whiskey of the Year" by Whisky Advocate. 

You'd be hard-pressed to find a more iconic name in the Irish whiskey world than "Jameson." The Jameson tradition dates all the way back to 1740, when John Jameson was born into a family whose motto, "Sine Metu" ("Without Fear"), was earned through the family's courage in fighting pirates on the high seas during the 1500s. John Jameson himself was a living embodiment of Sine Metu, and his ancestors' bravery inspired in John a boldness that led him not only to open his own distillery in the latter 18th century, but also to pioneer the technique of triple-distilling whiskey now the gold standard in the Irish whiskey industry. John Jameson lived to be 83 an impressive feat for someone born in the 18th century and his descendants John II, John III and John IV all honored his legacy by leading the distillery well into the 20th century. Jameson Irish Whiskey is crafted from a mash of malted and unmalted barley that is triple-distilled just as it was by John Jameson himself centuries ago through three separate copper-pot stills: a wash still, a feint still and, finally, a spirit still. The mash itself is made using barley, maize and pure Irish water, further adding to the unique character of the whiskey. Jameson Original Irish Whiskey is a blend of pot still and fine grain whiskeys that have been aged for a minimum of 4 years. The whiskey is aged in a combination of ex-sherry and ex-bourbon casks to add spicy and sweet notes. Jameson Original Irish Whiskey is slightly floral on the nose with hints of spicy sweetness, which leads to a palate of spicy caramel notes combined with subtle notes of vanilla and almonds. The finish is smooth with notes of sherry and sweet fruit.

Caramel and vanilla flavors from the charred white oak barrels come through first with a spicy rye note from the spirit. The rye becomes more assertive in the finish. Clean, dry and spicy with a nice warmth. We crafted this rye to be smoother and more approachable than many rye whiskeys. Carefully pot-distilled, specifically to be aged in our selection of cooperages and sizes, the spirit is balanced between the spicy grain character of rye and the sweet caramel & vanilla flavors of high quality oak barrels.

The nose has soft caramel and vanilla notes to start out, with a touch of sweet corn at the end. Robust barrel flavors come through on the first sip, with dark caramel and smoky notes, that are followed up by hints of spice from the rye. It finishes dry and smoky on the tongue with a lingering corn after taste.

This is a fine Bourbon and is suitable to simply serve over ice, or try it as this suggested cocktail.

This whiskey started out in new, charred American oak barrels that provide the robust caramel and vanilla notes which balance the spiciness of the rye.  After this initial aging, the whiskey is transferred into freshly emptied American “Port” wine casks from our own winery – Mazza Vineyards.  Because the “Port” casks came from our own winery, they were filled with whiskey within 24 hours of the wine being removed.  This ensures the freshness of the barrels, which provides the maximum flavor and aroma impact.  The longer aging in these “Port” casks gives the whiskey a deeper, more ruby color and rich flavors and aromas of red wine, dark fruit and chocolate.

John Emerald Distilling Company is a family-run small batch craft distillery from Opelika, Alabama that has been operational since 2014. It is the first legal distillery that opened in the state since the end of the Prohibition era, a year short of a hundred years later. It all started when John and his son Jimmy Sharp, both homebrewers, started looking into opening a brewery. Finding the market to be oversaturated, they turned to craft distilling instead and started rigorous training and education. They came upon an old cotton warehouse in Opelika, a small and business-friendly town where the mayor welcomed them with open arms. The distillery now operates on 8 thousand square feet and has a tasting room that is open for visitors. They produce several spirits using their 350-gallon hybrid pot, each product named after one of John's and Jimmy's ancestors their (grand) father John Emerald Sharp, a successful businessman, being the distillery's namesake. The spirits include award-winning gin, vodka, rum, and single malt. At the very core of their lineup is the John Emerald Alabama Single Malt Whiskey, the only one to share the name with the distillery itself. The style is between bourbon and Scotch whisky, or as they like to call it American single malt. A part of the 100% malted barley grain recipe is smoked with peach and pecan wood, and Alabama wine barrel staves are added for a touch of smoke and added complexity. The spirit then matures in Missouri Ozark charred oak barrels in a room that simulates the changing of seasons with variable temperature.

Born on September 5, 1850, Jasper Newton "Jack" Daniel was the youngest of ten children. His parents were of Scottish and Irish descent. In 1864 Jack learned the art of whiskey making from the preacher and an enslaved man named Nathan "Nearest" Green. Nearest eventually became Jack Daniel Distillery's head distiller. Daniel's distillery founded in Lynchburg, Tennessee in 1866 was the first registered distillery in the country (at the time, distilleries were required to register with the federal government, and the Jack Daniel Distillery was given Registered Distillery Number 1). Today, Jack Daniel Distillery is one of the most distinguished and recognizable names in the spirits industry. Among all their offerings Jack Daniel's Black Label stands out as the instantly recognizable, iconic classic and the brand's flagship. It accounts for 96% of Jack Daniel's sales, making it the best selling whiskey in the world. While the true meaning behind the "Old No. 7" on the label was lost with Daniel's death, it is known that it won 7 gold medals in a very different time. It received its very first at the 1904 World's Fair in St Louis, Missouri, where the spirit reigned supreme over 24 others from across the globe a sign of things to come. The most important step in its creation is still the charcoal mellowing, or as they like to call it "The Extra Blessing". Before going into barrels, the clear, 140-proof distillate is filtered through handcrafted charcoal drop by drop, a process that takes from 3 to 5 days and is the reason behind the Black Label's signature smoothness. The story of Woodinville began with two best friends with a passion to make the greatest craft whiskey in the world. Woodinville whiskeys are made by time-honored traditions of bourbon production, using the highest quality locally grown grains, the best barrels, and coopers in the world, the most technologically advanced distilling equipment, and the wisdom of an industry legend, the late David Pickerell. Woodinville has already received notable accolades including "Craft Whiskey of the Year" for their Straight Bourbon, and "Craft Rye Whiskey of the Year" for their Straight Rye by the American Distilling Institute in 2018 and 2017 respectively. All of the grain used in production is grown exclusively for Woodinville whiskeys on the Omlin Family Farm in Quincy, Washington, run by third-generation farmers, Arnie and Phyllis Omlin. The locally sourced grains are mashed, distilled, and barreled in their Woodinville distillery, before heading over the Cascade Mountains to their private barrelhouses, where Central Washington's extreme temperature cycles stimulate the extraction of natural flavors from the oak. Before being coopered, the barrel wood used for maturation is open-air seasoned for eighteen months, allowing the elements to soften the wood's harsh tannins. The barrels are then slowly toasted and heavily charred to further enhance the wood's most desirable flavors. This meticulous process delivers a hand-crafted spirit with rich aromas of crme brle and spice cabinet, and decadent notes of rich caramel, dark chocolate, and vanilla bean on the palate with a sweet, lingering finish. The Port Finished expression takes their 5-year-old Straight Bourbon for another 6 months of finishing in ruby port barrels. This adds additional notes of candied cherries, dried fruit, berries, and chocolate to the already rich bourbon profile.

Following the end of the American Revolutionary War, Johannes Reginald Beam emigrated from Germany to the United States, and eventually settled in Kentucky County. At the time, Kentucky County was still considered part of Virginia, and was overseen by a military governor named John J. Bowman. After settling in Kentucky, Beam began harvesting corn and set forth a family tradition by distilling the excess grains he harvested into whiskey. Since then, seven generations of the Beam family have been involved in whiskey production for the eponymous company (the company is actually named after James Beam, who rescued it following Prohibition). Knob Creek Bourbon was created by Beam's grandson, Booker Noe, who after joining the family business in 1950 was promoted to Master Distiller just ten years later. Booker talked like a true Kentuckian and was known for his contagious personality, and through his launch of the "Small Batch Bourbon Collection" the collection includes Knob Creek as well as Basil Hayden's, Booker's and Baker's bourbons he is often credited as the father of the small batch bourbon movement. Knob Creek Bourbon takes its name from the small water source, Knob Creek, that ran through President Abraham Lincoln's childhood farm. Booker's vision for Knob Creek Bourbon was that of an honest, quality bourbon that could meet the standards strength, flavor, care, and patience of bourbon made before Prohibition distressed the industry just decades earlier. Like Abraham Lincoln himself, Booker designed Knob Creek Bourbon to be honest, unwavering and full of character. In 2016 the much-loved 9-year-old Small Batch Bourbon lost its age statement due to inventory issues. Now it's making its return in style with the label proudly stating: Knob Creek 9 Year Old Small Batch Kentucky Straight Bourbon Whiskey. Aged for 9 years and bottled at 100 proof, it's the Knob Creek you know and love. 

Single Malt whisky has always been the drive and passion behind Balcones. Over the years we have been inspired by and drawn to other spirit traditions, including the classic American spirit: Rum.  After a few small batches of our Texas Rum, we refilled the same casks with select Texas Single Malt, marrying two of our favorite things together to create a unique Texas Whisky. Bottled at cask strength, this is a bold Single Malt with notes of rock candy, spice cake and toasted oak.

Tasting Notes

NOSE: caramelized sugar, cherry cola, banana bread, sassafras, pistachio, peanut brittle, apple skins, peach cobbler

TASTE: big and full-bodied with tropical fruits, molasses, sweet black tea, gingerbread

Heritage Distilling Co. (HDC) is a craft distillery based in Gig Harbor, Washington. HDC has been the most awarded craft distillery in North America by the American Distilling Institute 7 years in a row from 2014 up until 2020. Each Heritage Distilling Co. product be it vodka, gin, rum, or whiskey has a unique story. This family-owned Craft Distillery makes their spirits by hand. From working directly with the farmers to grow their grains, to ensuring the purity of their water source, to milling the grain, making their own mash and wort, and running their own custom made stills. Heritage Distilling embodies a wholehearted "Field to Flask" ethos. Distilled to the most meticulous standards the Brown Sugar Bourbon has a mash bill of corn, rye, and malted barley. It is barreled for at least two years in new American Oak Charred Barrels. This 103-proof big brother of the award-winning whiskey is cut sparingly with their private crystal clear water source and infused with natural brown sugar and cinnamon flavors. More bourbon and less sweetness make this version the bigger and bolder of the two BSB brothers.

Our Mirador is a “second fill barrel malt profile” whisky. This bottling is made up of whiskies ranging from under 2 years to almost 5 years in age but because all of the aging took place in “used casks” the oak profile comes across much softer than some of our whiskies that are only half as old.

Tasting Notes

NOSE: under-ripe and green notes of pear, green apple skins and flower stems open up to honeysuckle and fallen leaves before revealing rich notes of honey, brown sugar and soft suede leather

TASTE: green fruit and light herbal aromas suggest green tea and honey with hints of fennel and lemongrass. As it breathes, the light fruit syrup impression concentrates and mingles with the soft spice notes to evoke apple pie with lemon curd, fruit salad with marshmallows and pecans and even a Rusty Nail with an accidental cucumber garnish

FINISH: the finish begins where the rich sweetness gets lifted by the citrus twang, drying to notes of sandalwood and marmalade before finally offering Earl Grey tea

The original recipe for Rebel Yell dates back to 1849, when it was invented at what would later become the Stitzel-Weller Distillery. Although many famous bourbons were produced at the Stitzel-Weller Distillery (including Pappy Van Winkle), most shared one unique characteristic pioneered by William Laurel Weller himself instead of rye, the bourbons used wheat as a secondary grain in their mashbill, lending a softer, smoother flavor to the whiskey. In 1936, nearly a century after the original recipe was developed, former Louisville Mayor Charles F. Farnsley officially registered the "Rebel Yell" brand, distilling the bourbon limited batches for exclusive distribution in the southern United States. This practice lasted all the way into the 1980s, when the Stitzel-Weller Distillery was disbanded and Rebel Yell found its way into the hands of LUXCO Spirited Brands. Now, more than 150 years later, Rebel Yell is bridging the gap between its proud heritage and modern tastes, and is available nationwide for the first time in its history. This 100-proof version of award-winning Rebel Yell Kentucky Straight Bourbon Whiskey is handcrafted according to the original, time-honored Rebel Yell recipe developed in 1849. The higher proof takes the wheated bourbon to another level with a prominent sweetness and added heat while retaining its smoothness, honey, and dried fruit notes. 

This powerful and inviting whisky epitomizes the harmony achieved through our blending and aging techniques. We begin with a blend of two non-peated French malt distillates that matured in different casks, the majority in extra old cognac casks and a proportion in new French Limousin and American oak casks. Once the optimal blend is achieved, the double malt ages exclusively in extra old cognac casks where it develops complex and balanced flavors. Finally, it is blended with a lightly peated French malt distillate and is finished in the same extra old cognac casks until it reaches its optimal flavor.

WHISKY MAKER'S NOTES

Color: Deep copper.

Nose: Bold and inviting. Warm raisin bread and baking spices surround notes of smoky barley.

Palate: Powerful yet delicate. The silky texture gives way to baking spices and juicy grapes. Rich and balanced, with a hint of peat.

Finish: Long, very long. The subtle peat amplifies the soft tannins of the extra old cognac casks.
