TASTING NOTES

TO THE EYE: Expect a rich, golden brown colour in your bottle of Three Wood. What gives whisky its colour? As the Single Malt matures in the quality bourbon and sherry barrels, a new and complex colour and flavour profile is created over time.

TO THE NOSE: Blackcurrant, brown sugar, orange, plum and raisin notes are present in our Three Wood.

TO THE TONGUE: Fruit and syrup. Hazelnut with hints of cinnamon and lemon.  A butterscotch sweetness adds to the overall complexity.

TO THE END: A fresh and fruity, smooth whisky with long lasting oaky sweetness.

Aberfeldy Distillery is nestled within a lush valley in the foothills of the Central Highlands of Scotland. Known as the ‘Golden Dram’, the distillery’s water source is the famous Pitilie Burn, renowned locally for its water quality and famed for its deposits of alluvial gold. Time-honoured techniques, such as longer fermentation, conjure rare honeyed notes – key to the signature sweetness of Aberfeldy’s malts.

The "Aberfeldy 12 Year Old Single Malt Whiskey" is Scented with spices and honeyed plump fruits. Syrupy, with lots of vanilla and fudge, with a whisper of smoke on the finish.

The "Aberfeldy 21 Year Old Single Malt Whiskey" Abounding in heather honey, creamy macadamia nuts and chewy beeswax. Plush with dried fruits, toasted coconut, silky oak and a wee trace of smoke.

An evolution of The Dalmore house style, this 18 year old expression takes on bolder notes becoming a robust and formidable
whisky. The Dalmore 18 showcases the result of extended maturation.

Matured initially for 14 years in American white oak ex-bourbon casks, the spirit is then transferred to 30 year old Matusalem oloroso sherry butts for a further four years. These sherry butts from the world renowned sherry house Gonzalez Byass are selected exclusively for The Dalmore.

The Dalmore 15 year old is smooth, rich and well rounded; the epitome of The Dalmore house style. This delicate and approachable vintage is initially matured for 12 years in American white oak ex-bourbon casks, then split equally between three different sherry woods Amoroso, Apostoles and Matusalem oloroso for a further three years. The character and complexity of The Dalmore 15 are acquired during this unique cask journey. The spirit is finally reunited in an upstanding sherry butt, allowing the flavours to marry.

The Dalmore 12 year old, with its intricate aromas and flavours, is recognised as a whisky with character far beyond its age. This was Andrew Mackenzie's original masterpiece. At a time when it was standard to mature whisky for six years, Andrew Mackenzie demonstrated his pioneering character by being one of the first to double the maturation period. His boldness truly paid off, The Dalmore 12 year stands apart as an exceptional whisky, as much today as it did in the 19th century.

Matured for an initial nine years in American white oak ex-bourbon casks, the spirit is then divided for its final flourish. One half remains in the bourbon barrels, while the other is transferred to 30 year old Gonzalez Byass Matusalem oloroso sherry butts before they are reunited to create this phenomenal whisky.

Chivas Ultis captures the true essence of Chivas Regal. Blending five of our most precious signature single malt Scotch whiskies from Speyside, the rich and full-bodied flavour of this blended malt whisky reflects the true diversity within the region. Less than 1% of the millions of casks within the Chivas inventory were used to create Chivas Ultis. Each cask was individually hand-selected and nosed to ensure the highest quality within this blend.

TASTING NOTES

CASK FINISH: Chivas Ultis blended malt whisky is matured in both European and American oak casks.

NOSE: Commanding and rich aroma reminiscent of peach and red apples, laced with cinnamon, fudge and honey.

PALATE: Smooth vanilla texture, brimming with clementine and apricots. Full-bodied flavours give way to a background of soft caramel, spicy cloves and ginger.

The whisky matures in our beach side warehouses exposed to the North Sea air, which lends it intriguing salty notes; a Highland malt with seductive coastal charm. Despite being mothballed for over twenty years, the distillery has a history of proven maturation, with award winning old vintages dating back to the 1960s, whilst the recognized younger whiskies are bottled at higher strength. The Glenglassaugh Revival has been matured in a balanced and unusual mix of American bourbon cask, red wine European oak casks, and undergoes a final maturation in sherry casks.
