In 1805, the Mitchell & Sons Wine Merchants Company was established in the heart of Dublin, Ireland. By the turn of the 19th century, the Mitchells sold a range of Irish whiskeys under the name "Spot." This name originated from the company's practice of marking casks of different ages with a spot of colored paint. As a result, Mitchell & Sons sold whiskeys named Blue Spot, Yellow Spot and Red Spot, although Green Spot emerged as their most popular brand. Today, Green Spot Single Pot Still Irish Whiskey continues to be crafted in the heart of Ireland. The whiskey is made from malted and unmalted barley, which are milled and mashed before being distilled through a traditional pot still. Following distillation, the whiskey is matured in a combination of American oak casks that were previously used to mature bourbon (75%) and European oak casks that were previously used to mature sherry (25%). Once the whiskey has matured for eight to nine years, the casks are blended together and brought to proof. "Pot Still Whiskeys define the traditional flavor character of Irish whiskey and we have seen a renewed interest and growth in the category over the last few years," says Brian Nation, the master distiller at Midleton Distillery, which makes Green Spot Whiskey. Green Spot Single Pot Still Irish Whiskey has an aroma of butterscotch, caramel, honeyed oak, pine and orange that gives way to notes of citrus, tart apples, plums and apricots on the palate. The finish is smooth yet slightly spicy, with a touch of cinnamon and ginger. Green Spot Single Pot Still Irish Whiskey was just released in the United States in 2014. It was named the top spirit of 2012 by "Serious Eats," and is "unquestionably one of the world's greatest whiskies" according to Jim Murray, author of the Whisky Bible.

After the various casks have been blended together, Yellow Spot Single Pot Still Irish Whiskey is bottled at 92 proof, just a bit higher than other traditional Irish whiskies which are bottled at 90 proof. "Pot Still Whiskeys define the traditional flavor character of Irish whiskey and we have seen a renewed interest and growth in the category over the last few years," says Brian Nation, the master distiller at Midleton Distillery, which makes Yellow Spot Whiskey. Yellow Spot Single Pot Still Irish Whiskey has an aroma of red bell peppers, nutmeg, green tea and sweet peaches from the Malaga casks. On the palate, there is a honey sweetness accented by cloves, baked apples, milk chocolate, coffee and creme brulee. The finish is dry and complex, with notes of toasted oak, red grapes and barley. Yellow Spot Single Pot Still Irish Whiskey was released in the United States in 2015 in extremely limited quantities. The whiskey was named Irish Whiskey of the Year by Whisky Advocate in 2016, in addition to winning Gold in the Wizards of Whiskey competition that same year.

On May 10, 1785, a hot air balloon crashed into the city and began a fire that destroyed over 100 homes, making Tullamore the site of the world's first known aviation disaster. Following the accident, the city adopted a phoenix (a phoenix is a mythological Greek bird that is reborn after it dies) rising from the ashes as its coat of arms, a symbol of its resilience and recovery. Tullamore DEW Distillery was founded within 50 years of the accident, and is situated at the very site where the hot air balloon struck a smoking chimney, which started the fire. Tullamore DEW Irish Whiskey is made from three different grains, including malted barley, unmalted barley and corn. Once the grains are harvested, they are milled and mashed with hot water before being fermented in wooden washbacks. During fermentation, the grains' sugars are converted into alcohol, creating a strong yet sour beer called wash. The wash is then triple distilled through three copper-pot stills: a wash still, a low wines still and a pot still. Through each distillation process, the alcohol content and flavors of the whiskey are intensified. Following distillation, Tullamore DEW Trilogy Irish Whiskey is aged for 15 years in a combination of ex-bourbon, ex-Oloroso Sherry and special ex-rum casks, making this both the oldest whiskey ever released by Tullamore DEW and the first time the distillery has used rum casks in such a way. As a result, Tullamore DEW Trilogy has a rich aroma filled with tropical fruits, mixed nuts, tannins and oak. The Walsh Whiskey ceremoniously opened in June of 2016, in the heart of Southern Irish farm country where they produce four versions of The Irishman, three Writer's Tears, and two varieties of Irish Cream Liqueur. The picturesque Walsh Whiskey marks the return of Whiskey distilling to County Carlow for the first time in over 200 years. With its three specially crafted imported pot stills built in the legendary Scottish Forsyths and two, forty plate column stills. Glendalough is an idyllic little town in eastern Ireland. Gaelic for "valley of two lakes," it was said to have been founded by a man named Saint Cemgen also known as Saint Kevin. The Glendalough Distillery, Ireland's first new craft distillery, was set up by five friends from Wicklow and Dublin with a deep passion for reviving the heritage of craft distilling in Ireland. The 18th & 19th centuries there were the glory days of the Irish whiskey industry, with over 200 licensed distilleries in all of Ireland. There were also countless unlicensed distilleries at the time, producing diverse styles of poitn, whiskey, gin and even absinthe. But through a series of unfortunate events, the Irish Whiskey Industry dried to a trickle in the 1970's. Glendalough Distillery is part of a revival of this Irish heritage. Their philosophy is "to make innovative spirits while staying true to the tradition and heritage of our ancestors." Glendalough started out making poitn the traditional Irish distillate made in small pot stills. From there they seamlessly transitioned to whiskey production, and most recently, seasonal,wild botanical gins. All of their production is handmade. This unique single grain, is a light and floral whiskey distilled in a Coffey still from a mash bill of Irish malted barley and corn. "It spends three and a half years in American oak first-fill Bourbon barrels before being finished for six months in Spanish Oloroso sherry casks. The Bourbon barrels impart deep, robust chocolate and caramel notes, while the Oloroso casks lighten the palate with fruitier notes and touches of nutty tones. With both barrels being oak, you get that beautiful vanilla thread youd expect to run through an Irish whiskey. Both barrels are porous too, allowing Ireland's temperate, maritime air through to make its impression" (producer).

Drogheda is one of the oldest Irish towns where the first written records of whiskey production date back to 1556. The town has a rich history of whiskey distilling and had 18 operating distilleries in 1774. As we know, Irish whiskey was in decline in the 20th century, due to the civil war, trade dispute with the UK, and Prohibition in the US with only a handful distilleries remaining operational, none of those in Drogheda. Boann Distillery joined the resurgence of Irish whiskey in 2019, producing the first spirit in the town in more than 160 years. The company was launched by Patrick "The Whistler" Cooney and his wife Marie with several other family members. Backed by 40 years of experience in the industry, the family has the know-how, skill, and passion to create premium Irish whiskey. On one hand, they honor the rich tradition of Irish whiskey, on the other they take innovative approaches using cutting-edge technology which includes their state-of-the-art brewhouse and unique 3 copper-pot stills that use nanotechnology all with the goal of creating some of the finest whiskey and craft gin. All the ingredients are 100% natural, including locally-grown barley from native farmers and water from the Boyne Valley well. The operation is overseen by Michael Walsh. Ireland's youngest head distiller has accumulated a vast amount of knowledge during his Chemical Engineering studies and when getting his Certificate in Distilling in 2012, quickly rising through the ranks. They recycle their water and harness the heat that is generated during distillation, which then helps run their packaging lines and heat their restaurant, visitor center, and offices. Distillation byproducts are used as animal feed. Walsh is more than just a head distiller, though.
