Hand-selected agave is roasted in a conical stone oven, tahona milled, and naturally fermented in wooden vats. Mezcal Los Javis is distilled in small copper pots and is individually bottled and hand numbered.

Mezcal Los Javis Reposado is made only using the finest grade of barrels from top U.S. bourbon distilleries.

Espadin is Oaxaca's most cultivated maguey for its high sugar content and ease of reproduction. Los Javis Espadin maguey grows in the humid and arid central valleys of Oaxaca and takes eight to twelve years to reach full maturity.
