Round and full of flavor, our rum is made from a collection of the finest molasses available. As always, we bring out the best in our ingredients through traditional double distillation in hand-built copper pot stills. The result of our unique cooperage program, consisting of a variety of oak species and multiple toast profiles, is a bold and robust rum with rich deep fruit flavors, with viscous and warm notes of vanilla and caramel. This is a rum to excite both the rum purist and the committed whisky drinker.

NOSE: rock candy, pancake syrup, tanned leather, violets, burnt marshmallow, under ripe cantaloupe, saltwater taffy, prune, menthol, hoisin, roasted nuts

TASTE: lush and coating with cacao nibs, hazelnut syrup, char, tart cherry skins, burnt toast, caramel

FINISH: medium finish with layers of raw sugar, fruit skins, candied beets, char, tawny port reduction and abundant tannins

Big flavors have always been the cornerstone of our prized Texas Whiskies, and Texas Pot Still Bourbon is no exception. Made grain-to-glass using a traditional pot still distillation ensures a rich and viscous spirit that stands up to aging in new charred oak without losing its essence. Each dram is full of character and body, with an aromatic entry and soft finish, for an approachable yet memorable experience.

Our 100% Rye Mashbill began with Elbon Rye from Northwest Texas accompanied by crystal, chocolate and roasted rye. Driven by constant curiosity, we distilled our Rye in our copper pot stills, bringing new subtlety and perspective to our approach.

The true story of Rumble Cask Reserve started as a simple case of lost and found, but resulted in something brilliant and remarkable. Since that first discovery, we have deliberately nurtured a small portion of our stocks to bring you an expression that is rich, full and tantalizing. Every batch is a mingle of just a few cask, and each exemplifies different facets of this rare spirit. Rumble Cask reserve has become very dear to us over the years, and we look forward to sharing its diverse nature.

True Blue 100 is made from the same select barrels of our blue corn whisky that have always gone into our True Blue Cask Strength, diluted down to 100 proof. As such, many Bourbon drinkers, in particular, may gravitate to this powerfully subtle dram.  Since the Bottled-in-Bond Act of 1897, ‘100 proof’ has long stood for quality and authenticity. True Blue 100 carries on that tradition. 100% of the whisky in this bottle was born, raised, and bottled at Balcones–from mash to glass. More approachable than full cask-strength whisky, True Blue 100 retains the depth and complexity of over-proof spirits with the softer edges, supple textures and fuller fruitiness that slight dilution can bring. Rich notes of honeyed citrus, stone fruit and cinnamon and a rich, roasted corn palate. Perfect “as is” or with as much water as you prefer.

A timeless style of malt whisky, Balcones “1” Texas Single Malt breathes new life into centuries of distilling tradition with classic techniques and ingredients adapted for New World tastes.  Opening aromas bear hints of toffee and overripe fruits. On the palate, layers of toasted malt and honey give way to mellow notes of baked pears and apples. A long finish is accompanied by cinnamon and cloves. Single Malt whisky has always been the drive and passion behind Balcones. Over the years we have been inspired by and drawn to other spirit traditions, including the classic American spirit: Rum.  After a few small batches of our Texas Rum, we refilled the same casks with select Texas Single Malt, marrying two of our favorite things together to create a unique Texas Whisky. Bottled at cask strength, this is a bold Single Malt with notes of rock candy, spice cake and toasted oak.

TASTE: big and full-bodied with tropical fruits, molasses, sweet black tea, gingerbread

Our Mirador is a “second fill barrel malt profile” whisky. This bottling is made up of whiskies ranging from under 2 years to almost 5 years in age but because all of the aging took place in “used casks” the oak profile comes across much softer than some of our whiskies that are only half as old.

NOSE: under-ripe and green notes of pear, green apple skins and flower stems open up to honeysuckle and fallen leaves before revealing rich notes of honey, brown sugar and soft suede leather

TASTE: green fruit and light herbal aromas suggest green tea and honey with hints of fennel and lemongrass. As it breathes, the light fruit syrup impression concentrates and mingles with the soft spice notes to evoke apple pie with lemon curd, fruit salad with marshmallows and pecans and even a Rusty Nail with an accidental cucumber garnish

FINISH: the finish begins where the rich sweetness gets lifted by the citrus twang, drying to notes of sandalwood and marmalade before finally offering Earl Grey tea

The first Texas whisky on the market since Prohibition, Baby Blue is crafted from roasted blue corn. This rich and oily maize adds new sophistication to the corn whisky tradition while keeping the freshness and verve of classic American distilling. Intentionally youthful, Baby Blue captures the essence of this prized corn with a round nuttiness, roasted overtones and refined complexity. The mouthfeel is viscous with a soft finish. A true Texas original that we are delighted to share with the world.

FINISH: medium long warming, late cinnamon/leather spice, mint and green peppercorns

Lineage is a marrying of the traditional Scotch Single Malts that have long been an inspiration to us with innovative approaches to grain and maturation to celebrate Texas provenance. Made from both Scottish and Texas-grown barley and aged in both refill and new oak barrels, Lineage celebrates both old and new traditions.
