Apple varieties include Bedan, Binet Rouge, Bisquet, Fréquin Rouge, Saint Martin, Rambault, Moulin à Vent, and Mettais.
100% pure apple juice is fermented for four months to reach ideal dryness before being bottled. The second fermentation occurs naturally in the bottle.
