Creador Espadín Capón Mezcal Artesanal by José Alberto Pablo is the first capón batch for this agave variety—made from Espadín whose quiote was cut, then left in the ground longer to intensify sugars. Cultivated in Sola de Vega, Oaxaca, this artisanal mezcal brings forward capón’s signature depth with floral, fruit, and smoky-earth tones.

Tasting Experience

• Appearance: Pale gold with soft amber reflections.

• Nose: Bright rose petals, banana, clove, and hints of leather.

• Palate: Floral sweetness and cooked agave lead, followed by citrus rind, herbs, and a touch of wet clay.

• Finish: Warm and lingering with light smoke, roasted wood, and subtle savory earth.

Craftsmanship

• Agave & Capón Process: Made from Agave angustifolia (Espadín), aged 8–10 years. The quiote was cut (capón), then the plant remained in the field an additional 9–12 months before harvest.

• Production: Agaves are roasted 4-5 days in rock-lined underground oven with walnut wood. Hand-milled in a wood canoa using mallets. Fermented naturally in clay pots, then distilled twice in clay pot stills.
