It all started back in 2014, when our founder Dan, a native New Yorker and whisky connoisseur, had moved to the Cotswolds after working in finance in London for many years. Launching our WHISKY
After three years of eager anticipation, in October 2017 we released our Cotswolds Signature Single Malt Whisky, the first whisky ever to be distilled in the Cotswolds and the one which remains at the heart of our DNA. In the years since its launch, we have expanded our range of single malt whiskies to include our Cask Collection comprising four unique cask expressions, a yearly limited edition Hearts & Crafts series drawing inspiration from the Arts & Crafts movement, and hand-picked single cask releases.

Aged for full term maturation in ex-peated quarter casks, our Peated Cask Single Malt Whisky is part of our Cask Expressions Collection. A delightful and moreish cask strength single malt with subtle hints of peat smoke on the palate which complement the vanilla notes from the oak and the fruitiness of our single malt spirit. Think 'smoky vanilla ice cream', as our distillers like to describe it!

Malt: 100% locally grown, traditionally floor malted barley from the Cotswolds.

Yeast: Two complementary varieties - Anchor and Fermentis - to ensure good yields and excellent fruity flavors.

Water: Village water supply - filtered, softened and demineralized before use.

Wood: Ex-peated quarter casks from Islay, Scotland.

TASTING NOTES

NOSE: Vanilla with light charring and a touch of dried fruits and spice.

Our Sherry Cask Single Malt Whisky is a marriage of carefully selected and blended sherry casks and features in our Cask Expressions Collection. Each yearly batch is unique, drawn from the finest American and Spanish oak hogsheads and butts, some of which have been seasoned with dry Oloroso sherry and others with sweet Pedro Ximénez. All have been sherry-aged through their full maturation for a deeper and more flavourful whisky. Full of dried fruits, chocolate and a touch of spice.

Of Domaine Cristal’s 45 historical vineyard plots, only 39 were selected to go into the final blend this year, those in which the grapes reflected the true identity of this unique wine: purity of fruit, remarkable finesse and elegant length. Cristal owes this loyalty to the soil to its permanence. It is a wine that is rooted in the eternal, that of the seasons, a ripening cycle, a heritage and a quest. The quest for excellence, purity and harmony, to create a wine that vibrates in tune with its terroir and mirrors its qualities. All that remains is for the cellar master to adjust this resonance, to give the wine the most fitting ageing process to allow it to vibrate at the highest level.

THE RADIANCE OF A SUNNY YEAR
2014 was a bright and sunny year in which the fruit and finesse were more radiant than we ever thought possible. This sunny vintage gave us a generous and well-ripened harvest of grapes which allowed us to craft a Cristal that is truer than ever to its identity. The 2014 vintage has given us a more terroir style of wine than ever before, one in which the purity and excellent drainage properties of the chalk enabled us to mitigate the vagaries of the weather over the year. Gentle, increasingly eco-friendly sustainable growing techniques have resulted in a Cristal 2014 that shows us the ultimate balance between maturity and freshness.

A WINE OF THE SOIL
The Cristal identity is unique, original and truly unlike any other in the history of the fine wines from the Champagne region. It is a wine of the soil, a wine of depth, a wine of the land yet turned to the light, reaching for the heavens that it almost seems to touch. Cristal is a wine of evolution, a wine that continues to reveal itself to us, slowly and gradually as it ages, to unveil a very different side to itself and the true extent of its unique personality. Every new vintage reveals the unmistakable Cristal character although through a very different prism each time, a kaleidoscope of flavors and textures, a palette of nuances.

About the Brand

It all started in 1790 when the 25-year-old son of a Scottish prosperous cabinetmaker asked for a 300£ loan from his father to set up as a wine merchant in London. This ambitious young man was George Sandeman, the founder of Sandeman, who ended up establishing one of the world’s leading Port and Sherry wine businesses. From early on Sandeman specialized in these two great Iberian fortified wines and, following a usual practice in those days, began trading not from own offices but from Tom’s Coffee house, on Birchin Lane, London. Business was agreed on a ‘gentleman’s word’ and George soon gained an impeccable reputation, characteristic of The House of Sandeman to today.

100 Points! Perfect score for a perfect wine
At release in 2019, ‘Sandeman Quinta do Seixo 2017 Vintage Port’ was awarded a perfect score of 100 points by ‘Wine Enthusiast’ in the United States.

Produced exclusively from selected grapes grown at the namesake property, ‘Sandeman Quinta do Seixo’ is a superb Vintage Port, produced only in years that show the highest quality and the unique terroir identity of this centuries’-old estate, in the heart of the Douro region.

Sandeman Quinta do Seixo Vintage Porto is an exceptional wine produced from carefully selected grapes exclusively from Quinta do Seixo, a winery situated in the Cima Corgo sub-region, in Douro Region.

Tasting Notes

Deep colour, almost opaque. Aroma of excellent complexity, with wild bush and spicy notes like curry, pepper and ginger, red berries and black fruits mixed with a light cacao touch, the result of a good maturation, along with a slightly stony finish. On the palate, it has a powerful attack, with a lively acidity, firm and well present tannins, wild bush and red berry notes, with an extremely long finish and great concentration.

VARIETIES: 35% Touriga Nacional, 30% Touriga Franca, 25% Vinhas Velhas, 10% Sousão

WINEMAKING: Vinified at the Quinta do Seixo using selected grapes from existing plots at the Quinta. The grapes were sorted at the vineyard and on arrival at the winery. After soft-crushing and destemming, a gentle maceration took place via treading in traditional granite lagares at controlled temperatures. At the right moment, wine spirit was added to stop fermentation and "benefit" the wine;

MATURATION: After the harvest the wine remained in the Douro where it was subject to its first racking. It was transported to Vila Nova de Gaia the following spring to enter the traditional aging process in oak barrels. During this period, the wines were subject to further racking, analysis and tests to monitor their evolution. The final blend was obtained further to rigorous selection of the wines, in order to ensure the best possible quality.

STORE: Ready for immediate consumption. However, this wine will gain complexity if aged in the bottle, reaching its peak after approx. 15 years. It has a lifespan of 20-25 years and will retain the great quality of a good "cellar wine" after this time.

SERVE
If stored for a considerable period, it is natural that sediment will form in the bottle. In this case, the wine should be opened with care and decanted. It benefits from being opened some time prior to consumption. Serve at between 16ºC-18ºC.

ENJOY: The elegant and complex profile of this wine makes it the perfect accompaniment to rich chocolatey desserts, red fruit tarts and intense cheeses.

The Castle Hill Series Batch Two, the second release of our limited-edition batch of 13-year-old hand-selected straight bourbon whiskies bottled at barrel proof. It celebrates the art of batching well-aged casks, one of the many methods Milam & Greene enlists to create its award-winning range of whiskies. The series is named for the historic Texas Military Institute, also known as “The Castle,” in Austin, Texas that is home to Heather Greene’s blending lab.

Milam & Greene The Castle Hill Series Batch Two shines in the glass with a deep burnt amber color. On the nose it is a dichotomy of youthful vigor and aged splendor with scents of warm peach cobbler, brown sugar, and vanillas with hints of almond and milk chocolate. Bottled at cask strength of 111 proof (55.5 % ABV), this potent straight bourbon whiskey features velvety, opulent flavors of caramel, cinnamon, cherry, vanilla, and tobacco with a warming and long finish.   

Just 26 vintage barrels were married to create this superb whiskey, making it our most limited release. The Castle Hill Series carries the oldest age statement in the Milam & Greene family of whiskies, and each batch includes the distillery’s most exclusive casks.

About the Brand

Since our first batch of rum was bottled and distilled in September 2009, the Kōloa Rum Company has been bringing The Spirit of Aloha to the world.

To produce Kōloa Rum, we first start with pristine rainwater from Mount Waiʻaleʻale and the nearby mountain peaks and rainforests that filtered through volcanic strata into vast underground aquifers. Our rums only use pure “tall cane” sugarcane, locally sourced coffee, chocolate and ingredients to develop authentic flavors of the spirits we produce.

Using these unique, authentic ingredients, our premium Hawaiian rums are twice-distilled, blended, bottled, and shipped directly from the distillery in Kalaheo, on the south side of the beautiful Garden Isle of Kauaʻi. The Kōloa Rum Distillery Team is proud to produce and ship across the U.S. mainland, Australia, Austria, France, Germany, Japan and Western Canada. Our rums are distilled in single batches using our vintage (circa 1947) 1,210-gallon copper-pot still, with a copper column and condenser. During the second distillation, the distillate is collected in three sections – heads, heart, and tails. Kōloa Rum uses only the heart of the batch.

Our unique distillation process and quality ingredients used combine to provide the smooth, clean and polished flavor and aroma characteristics that distinguishes Kōloa Rum from most others.

Kōloa Dark Rum is made from pure cane sugar, distilled in an impressive vintage 1,210 gallon, steam-powered copper pot still and cut with filtered water from the ancient Mount Waiʻaleʻale.

The rum is distilled 2 times at 160 – 180 ABV.

Appearance
This dark rum is a genuinely deep chocolate brown that rolls with a cloying viscosity around the glass, developing into thick, slowly rolling light black coffee colored legs.

Nose
Kōloa Dark Rum has a robustly vanilla nose that envelopes the perimeter of the glass, upon further and closer whiffs of this aromatic vanilla behemoth subtler notes of dark semi-sweet chocolate, fresh brewed espresso and chocolate cupcakes arrive to round out the olfactory experience.

Taste and Finish
This vanilla-driven dark rum sings from the nose to the glass exactly. It presents itself with robust flavors of vanilla, dark semi-sweet chocolate and lightly finishes with espresso, all encompassed within a dry, highly flavorful dark rum.

In 2006, a band of dedicated Rye enthusiasts purchased a 500-acre dairy farm in the rolling hills of Vermont's Champlain Valley. Just recently, until his passing the WhistlePig farm had been home to Master Distiller Dave Pickerell. After he graduated from West Point with a Bachelor's degree in Chemistry, Pickerell served in the military for eleven years as a cavalry officer. Later he received a Master's degree in Chemical Engineering from the University of Louisville, before serving as chairman of the Kentucky Distillers Association and master distiller at Maker's Mark in Loretto, Kentucky for 13 years. "This is what I was meant for," said Pickerell of the whiskey business. After leaving Maker's Mark, Pickerell embarked on a journey to find the perfect rye whiskey. "Rye, in its own essence, is just a brilliant grain... I wanted to do rye because it's America's historical whiskey." During the Revolutionary War, English blockades of American ports prevented the colonists from purchasing molasses used to make rum. As a result, American distillers, including George Washington, started making rye whiskey. This stunning 100% rye is one of the final expressions created by late Master Distiller and whiskey luminary Dave Pickerell. His dream was to create the best aged Rye Whiskey perfect for any rye cocktail. PiggyBack has an intensely powerful, spicy profile, imparted by its time in oak barrels. You can expect complex and smooth notes that shine through, yet don't overpower your drink. An outstanding in any concoction. Aged 6 years and bottled at 96.56 proof (56 is the year Dave Pickerell was born). 

In summer 2018, Dave Pickerell returned to our warehouses to realize his dream of creating the best aged rye whiskey for your cocktail – 100% rye for full spice flavors, aged six years for unprecedented complexity and bottled at his ideal strength. Stir or shake in good company.

VINTAGE 2015
 
Marking the warmest year since 2008, the 2015 growing season set a record for early bloom. 
Drought conditions persisted, and rainfall was erratic, with most of the much-needed rain falling at the end of the previous year and supplemented by only a single storm in February, which was enough water to sustain the vines. Cooler conditions during flowering ultimately lead to a smaller number of berries on each cluster and lower than average yields. Warm summer months led to advanced veraison, which was followed by perfect ripening conditions. Harvest began on September 1 with short pauses; heat spells and continued warmth allowed for the berries to be steadily picked at their ideal maturity. The harvest was completed on October 8.
 
Initial dark fruit, spice and baking aromas in the 2015 Opus One are interwoven with seductive notes of violet, black tea, and sage. The entry is vibrant with ripe dark fruit flavors of plum, blackberry and blueberry followed by hints of vanilla and cocoa. Silky, fine-grained tannins provide structure and a creamy texture. The wine finishes with fresh acidity and a rich, lingering finish that promises longevity in the cellar.

Mezcal Real Minero Espadin

About the Brand

Real Minero is a family-operated producer of mezcal that is famed in Mexico and over the globe as one of the finest producers of the spirit. They are based in Santa Catarina Minas, where they employ traditional practices in making only around 300 liters of mezcal per month. They started distilling in the 1970s but the family has been involved in the farming of agaves far longer. Their mezcal is certified organic and they participate in programs that deal with agave reforestation. They have played a large role in bringing back several types of agaves that were thought to be extinct. Today, Edgar Angeles has had the baton passed to him by his late father Don Lorenzo Angeles and continues making the finest mezcal. Their mezcal is made in small batches using small 70-liter clay pot stills. The Mezcal Real Minero Largo is crafted by Mezcalero Edgar Angeles from 100% 14-year-old Largo agaves, which is an extremely rare species of the Karwinski family. The spirit is rested in glass before being bottled, which softens the profile considerably. It's fruity and tropical, yet delicate and mineral-rich a beautiful, premium spirit that is laced with tradition.

Territorially located in the central zone of the state of Oaxaca, in the Central Valleys Region, our community was originally indigenous, although the inhabitants of the surrounding towns spoke or speak the Zapotec language. In this context, it is peculiar that in Santa Catrina Minas today there is no presence of Zapotec speakers and the population is mestizo.

Our town is known by the name of Santa Catarina Minas, in honor of Santa Catarina de Alejandría, martyr of the years 307 AD. Due to the mineral abundance of its mountains, the population enjoyed its peak before the conquest; ironically this mineral wealth was part of its decline.

The first written reference to our community is found in the Book of the priest José Antonio Gay, which documents the visit of the judge Galdós from Valencia, to receive the complaint of more than eight thousand indigenous people who presented evidence of the mistreatment to which they were subjected. by the Spaniards, owners of the mines that existed there, which remained active until the beginning of the 20th century.

New Deal Old Tom Gin is pot-distilled in-house from 100% grain. Juniper, rose petal, citrus, and orris root add depth and texture. Each small batch ages in Oregon wine barrels, developing warm, toasted notes and an amber color. Our Old Tom Gin is just lightly sweetened in the traditional style.

We’re proud to announce that New Deal Old Tom Gin was awarded the best-in-class Platinum Medal in Sip Magazine’s 2021 Best of the Northwest spirits competition. 

What is Old Tom Gin? There are no exact rules but Old Tom is a gin that is often barrel aged and lightly sweetened. Before the advent of the column still, spirits were often much cruder and it was common to add sweetening agents to make them more palatable. And palatable this gin was indeed! Before London Dry Gin stole the show, Old Tom Gin was the gin of choice in 18th century England. In fact, it was so popular that it led to a gin craze that was seen as problematic in the eyes of the government. Several prohibitive laws were passed to slow consumption but this only drove the gin scene underground.

How did Old Tom Gin get its name? Well, like the history of many cocktails and spirits, nobody knows the exact answer but there are several theories. Some think an old tom cat fell into a vat of gin. Yikes. Others say that two men named Tom worked at a distillery, one young and one old, and that Old Tom was the one that invented this style of gin. The most fun theory seems to center around a wooden cat. Since gin was nearly outlawed, pubs secretly selling this ‘mothers ruin’ would alert interested parties to its availability by putting a wooden plaque of a cat outside their building. After a coin was deposited through a slot in the wall, the bartender would slyly pour a shot through a pipe out to the patron. This is the story we like to believe.
