The second release in Mount Gay's Origin Series looks at how the distillation of their rum can impact its flavour profile. Their expressions are made using a blend of rum distilled in copper pot stills and copper column stills, but the two bottles in this set are quite different. Each is made using the same ingredients and maturation methods, but one is made using rum distilled exclusively in copper pot stills, while the other have been distilled exclusively in copper column stills. Mount Gay Origin Series Vol. 2 - The Copper Stills Rum Tasting Notes
Nose: The aroma of the rum delivers notes of dark chocolate, funky heavy minerals, toasted almond, and vegetable-laden astringency.
Palate: The first sip of the rum provides notes of apricot, banana, dried apple, and tart lime with sweet caramel punctuating the flavors.
Finish: Notes of toasted coconut, limestone, and charred oak form as the rum quickly fades in a dry finish.
